Diana, when you cook the bulalo ,boil the meat for few minutes. Let them boil until there are red blood remnants that come out from the meat. Pour out the water to remove the pieces of blood then try to remove the pieces of blood by putting more water and then pour out the water. Replace it with new water until the meat are submerged. Add the cut onion, black pepper, minced garlic and ginger. Let it boil and then slow down the fire . Let it simmer to soften the meat. Add more water and continue cooking until the meat is tender. Add the potatoes first because they take a little bit to cook them. Few minutes later add your green leafy vegetables. Add salt or patis to taste.

When your water is boiling already turn your fire to low. It could give you a very tender meat when done. While if the fire is high, it could meat your meat tough/hard . Besides, by turning low the temperature of water is still the same and you can economize your expense on your fuel . If your corn is sweetcorn it requires only to be added before getting from fire. the trick to making nice beef soup is to mix brisket, ribs and shank. cook them for at least 12hrs in lowest fire. you wont need any salt or beef cubes for that. the umami comes from the different bone part and the fatty parts of brisket. remove the meat if it starts to fall of the bones. refrigerate the broth to easily separate the solidified lard.

Quick and soft suggestions though...If you cook again I like to recommend to pressure cooked the meat and on another pot you can saute the Onions plus garlic and some ginger...and then the meat is like 4 hours pressure cook then follow the potatos and the vegetables, lemongrass, and the spices....another way...just a suggestion though...Thank you Miss Diana!!!!
