    As a Maltese, compliments to chef Adrian Richardson and nutritionist Rosie Mansfield. This looks really tasty and way healthier than the more standard recipe with processed meats. Looking forward to more interesting recipes!

    Okay as much as I as a Maltese person appreciate you trying to replicate this delicious Maltese recipe it isn't right. So here find a traditional recipe for those who would love to try out this dish.
    2 tbsp oils
    2 medium onions and 3 cloves of garlic finely chopped
    400g of minced beef
    2 cans of tomatoes ( 1 juice 1 chopped)
    1 tbs of concentrated tomato paste
    1 small can of corned beef
    1 tbsp Worchestershire sauce or HP sauce
    Salt and pepper
    ( you can also add 1 tbsp of curry powder for more taste )
    Boil the rice ( important to leave it al dente)
    Once the rice is semi cooked add the sauce, one egg and some grated cheese and mix everything well together.
    Place in a dish and level it evenly.
    Sprinkle some more grated cheese on top and you can add another egg on top to glaze the whole top of the rice
    Bake it for about 15 to 20 mins till the rice softens and the top becomes golden brown

    Everyone has a take on this recipe. Regarding the eggs, my mother would beat them until they frothed and pour it on top of the rice but never mixed it in

    Traditionally this is made with a tomato/corned beef sauce.

    Well you're doing the first thing in Maltese would do make their own version as people have been saying the traditional version is with pork and beef half half and corned beef caned and also some curry some people make a water mix add free eggs and uncooked rice. The oven baking we'll cook the rice and then need to the end you just use a bit of grated parmesan on top. Most people like the top burnt is it reminds them of a wood fire oven

    My dad would make this with mince beef and pork mince with bacon he would add curry and sometimes peas he would use the long grain rice
    I make it but I do it with bulgerwheat instead of the rice only because it is kinder for my stomach
    He also cooked the macaroni and my favourite rabbit stew dad cooked a lot of cakes
    I think their cakes are better and you can dip them into your tea

    Thank You for being proud of Malta and introducong our culture and food-
    But Ross il Forn, Baked Rice in Malta is different, much different, in a polite way your dish is not traditional Maltese Ross il forn, you are missing a few ingredients and we dont add Zuchini or basmati rice. Kindest Regards

      Your being way to nice. And I’ve never met another Maltese person that ate 80% plant based. 80% pork maybe. LOL. oh my. I think it’s just better I stick to mom’s recipe book and not deviate.

    nice recipe for a baked rice but its not Maltese, it has meat in it. Never had it without.

      Well said. Baked rice includes meat... minced pork or beef or both, can also add bacon as optional

    Traditional Maltese baked rice includes mince beef….which you cook first before all those vegetable ingredients

    This is not how to make trafitional baked maltese rice this is a vegetarian dish maltese are far from vegetarians. Maltese dish has mince and cornedbeef .

    This is just your version of baked rice it’s definitely not Maltese and we would most definitely not use basmati rice just long grain rice .

      Agreed. When I lived in Malta, we had this as the first dish on a winter Sunday. Nothing like it!!! My grand ma was an expert. Can still smell the flavours while the ross il-forn was in the oven!!!

    Well I am maltese and your recipe looks yummy gonna try it for sure but its not the traditional maltese recipe for baked rice traditionally baked rice the maltese way is with cornbread combined with grounded and long grain rice not basmati

      You've got all the stuff in that's good some people think we don't use curry but my mum mum and dad use it on everything grew up on worchester sauce incarnation milk these are all influences from how English colonisation

    No,no,no,this is so wrong ! pls do not call it maltese ROSS IL FORN,your recipie is not even a relative of our baked rice.for ages its been done with corned beef or minced meat in the sauce and never has basmati rice been used,we are not indian! you said that you had it many times in malta- I assure you that it never had any vegetables in it,just the tomatoe sauce.

    LoL this not traditional Maltese baked rice! We do not traditionally use zucchini and carrots. Instead of curry powder you used chilies powder. Way off!!! Where is the bacon?

    Nooo! Just no! This is ridiculous! This is not at all Tradition Maltese Baked rice lady!
    You fry well the onions and garlic, minced beef, some people adds aswell a can of corned beef, some just dice pancetta instead and you cook it with the onion and garlic.
    When the meat is cooked, you put some spices! Where is the freaking spices lady?? Salt, pepper, herbs, I use italian herbs, curry, paprika, mixed spice. Some add aswell chili pepper.
    There are some people who dice carrots but very small, or some aubergines or zucchini, I don’t.
    2 cans of tomato pulp and 2 spoons of tomato pure, that’s correct. You let it simmer for 45 mins.
    We don’t use freaking basmati! It’ll break! We use normal rice either jasmine or white rice. We mix them up, some people adds 3 eggs and a bit of milk, i personally love my baked rice with besciamelle, eggs milk and nutmeg. And sprinkle top with just parmesan and pepper

    i would have used mozzarella and or fontina cheese and reserved some sauce to put all over the bottom of the baking pan and on top of the rice before you throw it in to bake
    it looks kinda DRY 🤮🤮🤮🤮🤮🤮🤮
