HAITIAN AKASAN aka CORNMEAL PORRIDGE

    Welcome back to my channel!!! and in today's video, I will be showing you how to make Akasan aka Cornmeal Porridge

    Ingredients:
    5 Cups of water
    2 cinnamon sticks
    6 star anise
    1 piece of peeled lime skin
    1 cup of yellow corn flour
    1 cup of sugar (optional)
    1 can of evaporated milk
    1 cup of regular milk (optional)
    1 teaspoon of salt
    1 teaspoon of nutmeg
    1 tablespoon of butter
    1 tablespoon of vanilla extract
    1 tablespoon of almond extract
    Directions:
    1.Wash the cinnamon, star anise and lime skin twice under cold water
    2.After 10 minutes has passed, add the cinnamon, star anise and lime skin to the boiling water.
    3.Add the salt to the boiling water (THIS HELPS TO BALANCE OUT THE SWEETNESS)
    4.Add cups of water to the yellow corn flour and mix well to prevent any lumps
    5.Add the flour mixture to the boiling water (PLEASE BE SURE TO MIX WELL TO PREVENT ANY LUMPS AND FROM THE MIXTURE TO SPLATTER ON YOU.)
    6.Add the sugar, evaporated milk, nutmeg , butter , almond extract and vanilla and mix it thoroughly.
    7.Let it simmer on medium low heat for 10 minutes and serve it warm. (PLEASE BE SURE TO REMOVE THE LIME SKIN BEFORE SERVING TO PREVENT ANY BITTERNESS
    8.And after that ENJOY ;-D

    I didn't have the corn flour so I used a box of jiffy corn muffin mix and the results were amazing. Thank you for this simple recipe and being so thorough 😘

    Great video as always. For step #5 when pouring the cornmeal in the boiling water how long should we stir until it's lump free?

      Just keep stirring until the lumps disappear/free. Keep the temp low/medium heat. 💛 #GoodLuck
