When mixing your sifted dry ingredients try using a rubber spatula and use a folding technique rather then whisking. All the air you just put into the flour when sifting is being forced out with a whisk. You will actually have a lighter cake if folding your ingredients. I learned this from a trained pastry chef when working my first pastry station. I'm gonna make this cake for friends and family soon. Thank you.

This video was pure nostalgic bliss for me. My family has had a recipe similar to this since I was a child with some differences as you'd expect. The tangerines would be layered along the bottom and instead of condensed milk (in the pan with tangerines) we would have three tsp, of honey. When the condensed milk mixture was added my Mum would always add either chocolate (I seem to remember her adding other things like salted caramel fudge chunks on some occasions). Either way, it always turned out amazing, the chocolate was my favourite, just so good with the tangerines and the honey crisp top always went down well too.

I use to make a cake with besan flour (chickpea flour), then pour on orange juice while it's (the cake) still hot - let it soak in and add some slices of orange on top. I don't know where I got the idea to do that, but it works and it's really nice. I used the besan flour because of coeliac disease, and I used oranges because I love oranges, and where I lived at the time had a tree with abundant oranges. 🍊🍊🍊🍊🍊🍊 Yes, I do realise these are mandarins, but it just reminded me of that time. Now that I'm vegan I will use chia seeds or flax seeds instead of egg, if I decide to make this cake again. Unfortunately though, will have to buy the oranges from a shop, so they won't be the freshest - but it should still turn out nice! Might try your recipe too, but adapt it to my needs. I'm obsessed with any combination of cranberries and oranges too though so I naturally couldn't help thinking it would be really good with some dried cranberries added into the batter, as well, or maybe just serve it with some warm homemade cranberry sauce on the side for people to drizzle on top of their serving. 😲

@@mattsmith3001 Some tangerines have lots of seeds. I grew up in California and we had citrus trees. Clementines are usually seedless. Slicing them through in the manner shown would help one easily remove any seeds.

I followed this recipe and it turned out exactly as it looks in the video!! It was fun to try a new method for baking (new to me). I may have had my stove turned too low, mine took about 40 minutes to set fully. I used mandarin oranges which ended up making the whole cake too bitter 😭 but the cake overall was very beautiful. my result was a heavier, american-pancake type of cake.
Someone further up in the comments observed for the sake of Americans that this is not the type of baked good we typically refer to as cake (which I suspected at the end of the video when I saw how resistant to the fork and spongy it was) but more like a fruit filled pancake. And you just confirmed that for me.
Fabulous idea. I've glazed orange icing as well which is delicious, but I wonder... tangerine icing might be something to try :-). I wonder if the lemon icing might overpower that tangerine essence.
I’m going to make this for a friend in a couple days. She loves chocolate so I will do a drizzle before the powdered sugar. I will use the fold technique and add zest to the cake from the comments. 🤗

I'm obsessed with any combination of cranberries and oranges too though so I naturally couldn't help thinking it would be really good with some dried cranberries added into the batter, as well, or maybe just serve it with some warm homemade cranberry sauce on the side for people to drizzle on top of their serving. 😲

@@mattsmith3001 Some tangerines have lots of seeds. I grew up in California and we had citrus trees. Clementines are usually seedless. Slicing them through in the manner shown would help one easily remove any seeds.

Das Rezept schaut sehr lecker aus. Ist besonders toll, da man im Sommer dann auch keinen Ofen anmachen muss. Vielleicht probiere ich das auch mal mit ungeschlagener süßer Sahne anstelle der Kondenzmilch aus.

I think I’ll try the brown sugar mixed in with the butter and pineapples instead and maybe half the condensed milk and in the batter I’ll put cinnamon instead or apple 🤔 I have never seen a cake made in a pan before this is awesome🙏🏾

I followed this recipe and it turned out exactly as it looks in the video!! It was fun to try a new method for baking (new to me). I may have had my stove turned too low, mine took about 40 minutes to set fully.
I used mandarin oranges which ended up making the whole cake too bitter 😭 but the cake overall was very beautiful. my result was a heavier, american-pancake type of cake.

Someone further up in the comments observed for the sake of Americans that this is not the type of baked good we typically refer to as cake (which I suspected at the end of the video when I saw how resistant to the fork and spongy it was) but more like a fruit filled pancake. And you just confirmed that for me.

I was thinking the same - and maybe use brown sugar and butter for the "bottom" rather than sweetened condensed milk. I already tried it this way, so I'm going to try with brown sugar and butter and pineapples next.
