Pantry Meal - Chicken Stuffing Casserole

- This Chicken Stuffing Casserole is a great option for a quick and filling meal when you need to eat from supplied on hand in your pantry! It takes just minutes to prepare and is a definite crowd-pleaser!
Ingredients:
1 pkg boxed stuffing mix (turkey or chicken or cornbread flavor)
1/4 butter (for the stuffing
Chicken* (see note below)
1 can cream of chicken soup
1 cup sour cream (can sub with 1/2 cup milk)
1 tablespoon dry minced onion (can sub 1/2 fresh diced onion)
1/2 teaspoon salt
For the chicken, I used a quart jar of my home-canned chicken. It is about 2 lbs of chicken and is about 4 cups of shredded. SO you can use 1-2 pounds of thawed or frozen chicken breasts if you don't have canned (you'll need to up the cook time a bit if using thawed uncooked chicken, and up the cook time significantly if using frozen chicken), or a couple cans of commercially canned chicken (like 2-3 of the big Costco/Sam's Club cans).
Prepare stuffing mix as directed on packaging.
Place chicken in bottom of 3qt baking dish sprayed with non-stick cooking spray.
Mix remaining ingredients in medium bowl and then layer over the chicken. Spread prepared stuffing mix over the soup layer.
Bake at 375F for 30ish minutes. ;)
Unless you're using uncooked chicken, then you'll need to add more time.
You can also use a different veggie in here if you wanted, canned green beans, corn, peas, etc.
