  • Today I have one of the most requested recipes for you guys, and it is of course the one and only, the best chicken shish kebab recipe you'll ever come across! It is tender, juicy and super delicious! Turn your meal into a feast with grilled vegetables and lavash. It is always fun to make and eat this dish for me and I hope it will be the same for you and your loved ones as well.     Servings: 4-6
    Difficulty: Medium
    Prep time: 10 minutes + marinating overnight
    Cooking time: 15-20 minutes
    1 kg of chicken thighs, boneless and skinless, cut into 4 cm (1,5 in) cubes
    1 large onion, pureed
    2 tablespoons yogurt
    1 tablespoon salt
    1 tablespoon black pepper
    2 tablespoons ground cumin
    1 tablespoon hot cayenne pepper
    1 tablespoon sweet cayenne pepper (you can use 1 tablespoon pepper paste and 1 tablespoon tomato paste instead of both sweet and hot cayenne pepper)
    8 tablespoons olive oil
    4 large cloves of garlic, pureed
    To garnish,
    Green pepper
    Tomato, halved
    Onion, sliced or quartered
    Garlic, peeled
    Lavash
    • Mix all the ingredients other than the onion in a large bowl.
    • Put the onion puree in a strainer and sieve its juice into the mixture. Onion juice will help to tenderize the chicken and enhance the flavour.
    • Give it a last mix. Cover and marinate in the refrigerator overnight or at least 4 hours. If using wooden skewers, soak them in water too.
    • Before cooking, take out the mixture from the fridge at least 45 minutes ahead.
    • Thread your chicken pieces onto the skewers. If the pieces are too long, you can fold them. Don’t push them too close together otherwise they won’t cook properly. Nine pieces of chicken should be around 20 cm (8 in) length on the skewers.
    • These are traditionally cooked on the barbecue but I have a technique for you to create the same great taste at home using a cast iron pan. Preheat your cast iron pan on high heat.
    • When the pan is hot, place your skewers on the sides of the pan without touching the bottom. This way, the heat from the pan will cook them.
    • Flip the skewers regularly. They will be cooked in 15-20 minutes - they are ready when soft and easy to pull apart.
    • In the last five minutes of cooking, place the green peppers, tomatoes, onions, garlic and lavash on the pan and grill.
    • It is time to eat! Wrap them all together in the lavash and take the perfect bite. These are great with bulgur pilav as well. Afiyet olsun!

    I had my reservation initially to try this recipe in dead winter in USA. You said it’s going to be smoky. Could not resist, tried making the kaboobs and as you mentioned in the video my house was filled with smoke. The chicken was very tender and delicious. The marinade was amazing. I made the one with tomato and pepper paste. I will give ⭐️⭐️⭐️⭐️⭐️

    I made these Kabab and my son said it was the best Kabab he ever had. I added ground onions and not the juice as in Bihari Kabab, ground onions are added. I made chicken Bihari Kabab too and those were really popular with my friends too. These are good for people who don’t want to cook everyday. Marinate and freeze in batches.

    I had to stop the video 2 minutes in to give you this tip about the plastic chopping board slipping--put a damp kitchen towel under it! A paper towel works best, as it is very thin, but for sustainable reasons, I try to remember to use a thin kitchen cloth instead. I don't know if anyone commented on this already, I looked but didn't see anyone suggest it.

    Hello from Toronto. Looks amazing, love it. Just a quick tip from your fellow chef, you can put the left over onion pulp in a cloth and squeeze it till it’s completely dry (it can be frozen to be used later) and then use that dry pulp in one of your kabab recipe ( 100- 150 gm per Kg), it will not only bring softness to kababs but also a very unique taste.

    I'm making this tomorrow, it's very similar to the chicken we already make but that onion water I've never used.
    That left over onion looks like it would go great in a dhay rhatah/yogurt mix. You get diced cucumber, cilantro, black pepper, red chili powder and optional is a small amount of chat masala. Mixed into yoghurt, each is adjusted to taste. It goes great with chicken.

    Omg heaven, we have similar kebab with saffron in the marinade and call it "joojeh kabab" same way of cooking the tomato if not on BBQ, but never cooked it with those spices and with pan like that so I'm so going to make it. Honestly thank you 🙏

    Wonderful looking recipe, can't wait to try. What kind of peppers are those? I've never seen those in a store, or in any seed catalogs. Are they hot (spicy) peppers? They kind of remind me of Japanese Shishito peppers, but they are a completely different shape. If anyone knows of a source of seeds for them, please let me know.

    This is the True Turkish recipe because you used onion juice only not the whole grounded onion .Tukmen people also use only soğan suyu.     I made this last weekend. I had to improvise a little as I didn’t have the skewers that could reach across my grill pan. So I just grilled directly on the pan. I did the paprika and cayenne (very hot) combo and even added a bit of tomato paste. This was delicious and for sure will become an item we will return too over and over again. Thank you! Keep doing what you do.

    This sounds amazing! I shall try it next week! What you are calling "aspirator" we call a "hood vent" in the U.S. Refika, you should sell some seeds and spices. I know I would be very interested. I am curious about those small peppers you used in the hummus recipe.

    Watching your show always makes my mouth water! What I particularly enjoy about your show is that you, unlike a lot of cooking shows, give actual cooking instruction. for example this video explains how you can tell if the chicken is done without taking a piece off and cutting it. You don’t just show us what to cook, but how to cook. You make me want to try Turkish food and make it accessible to my home kitchen in Massachusetts, USA - THANK YOU!

    Hmmm I could smell & taste that through the screen.
    Brought back wonderful memories, we'd finished climbing in the mountains and had stopped off in Ankara for a night after a long drive. Had found a place to stay and went out looking for something to eat. We wandered around and nowhere was taking out fancy, when a wonderful smell wafted from a little narrow alleyway as the sun was going down. We went to investigate and there was a little old man standing behind and even older looking push cart with a charcoal burner on it and a chopping board that was bevelled into a dish from years of use. He did chicken Şiş, and only chicken Şiş. But that's all he needed to do. In a mix of my bad Turkish & almost as bad German we ordered some and I'm so glad we did. It was the best tasting chicken I've ever had, even to this day. Soft, moist, packed with flavour and just enough charring. We were really happy with the food and gave him a lot of extra money as it was so good and he was so nice a man. Always wished I could go back and eat from his cart again.
    Can't wait 'till you sell the triangular Şiş rods, will give your recipe a go.
    Thanks so much for a great trip down memory lane.

      traveling is the best way to discover new food experience, for me it was the "Burek" spinach + cheese wrap inside the crispy pan fried phyllo pastry

      @@worldcitizeng6507 It really is, I miss travelling, but get to do it vicariously through channels like this one.
      The spinach & cheese burek sounds great, will have to give making it a go. I had one made from lamb/mutton with barberries & raisins mixed through. Lovely dish and it looks so good when its served up.
