      I just got through eating some crawfish and they wasn't the way I am use to them I never boil them I am planning on investing in me a cajun rocket pot Could you send me the info on that. and do you have any video I can purchase for boiling seafood and bar b cue I just bought me a grill with smoker on it. So I can learn myself Will let me know if I can purchase a video or book. Hoping can become a good cook like you!

    Purging crawfish is a myth. All you gotta do is wash them. When you see "purged" crawfish and that dirty water, it's just dirt from on the crawfish. It's easiest to just let a hose run water over top of your sack for a few minutes. One, you won't drown then. Two, salt kills crawfish, that's bad. Third, you keep them cool and that helps prevent loss as well. The only actual way to purge crawfish is put them in an environment where they only eat something like corn meal for 2 days. But ain't nobody got time for that lmao!

    As far as the seasoning and all the basics garlic onion lemon everything is on point. I would throw in some liquid Boil also though. Makes it way better. And wheres the sausage??

    I miss my sea food supplying at least 15% of the years protein by catching it down in Florida. In TN you're lucky to catch 1 lb of seafood / year. The 50 lb pot of crawdads cookin' with all the bounty.. Some are eating real good and I can't say I'm complaining. "The Crab Man Plus" small fee, we'll enjoy.     great video on how to do it, when I was young we used to catch them in the stream near by, and called then crayfish, were they the same thing? is there a web sight for frog bone Cajun sauces?

    When you wash the crawfish do you just rinse them off or do you let them sit in the water for sometime i know when we cook blue crabs we let them sit till we see the water turn color then take them out but they are still alive we never ate crawfish but i do wanna try them

    After first sampling these water bound delights over at JB's Spring Fling a few years ago I am hooked.
    Good for us that Louisiana Crawfish ships all over so we can get our fix in all the way up here in New England.

    Rus, just like lobster must be cooked up alive, I understand why crawfish must be too. You wouldn't believe the number of people who express great concern about how humanely I end the life of my fish! LOL!! What a super demo of how to cook crawfish!       Hi John! Yeah, some people just don't understand about having to drop them in alive. If they ever tasted one that has been dead for awhile, they would fully understand, and besides that a crawfish doesn't have a central nervous system like we do, and they don't have a brain capable of discerning what pain is. They die instantly as they hit that screaming pot of boiling water. What a great surprise the etched beer glass was! That really topped my day off! Great people and great work they do!       All sorts of things you can add to a boil. You just have to get a feel for how long something is gonna take to get tender and toss it in at the right time. My Annual Seafood Boil video I did a year and a half ago will kind of show you how to stage out putting different ingredients in, base on each ingredients cook time

    Hey Russ, when Keith says 6 inches of water, does he mean takes a measuring tape and measure 6 inches from the bottom or 6 inches fron the top. The pot you all have looks more than 6 inches if water. Would 10 gallons of water be the same as 6 inches in a 80 quart pot?

      He means 6 inches from the bottom in a 120 quart pot.

    NICE!!! i'm jealous. the last time i had good crawfish....a guy drove them up overnight and my uncle bought a bag and boiled them very similar to what you guys did. the closest i've had since is frogmore strained and dumped on the table. shrimp are ok, but crawfish are hard to beat.

    I see you put the bundles of garlic cloves in whole, you don't really need to at least split each single clove? just wondering if the boiling them whole will bring out the flavor?

      No need to cut them. They will completely boil away and all the flavor comes out

      +Trell of all Trades Once the pot returns to a boil which is fast in a Rocket Pot, boil for another 2 to 3 minutes

    In Arizona it's illegal to transport them from the catching location alive.. they require that you cover them in ice.. if as you say you can't or shouldn't eat dead ones.. does this mean you have to take all your kit with you to the lake and cook them there? or is covering them in ice, and then going from ice to boil going to be ok?

    excellent Video Rus, nice to see you and Keith together and the etch & sketch team are cool. I think it's funny when people get all worried about seafood going into the boiling water alive, if you like eating any form of meat the animal at some point has to be killed. no matter how you dispatch them, I'm sure it's not fun for the beast. it's a fact of life!

      Yes, because the sausage is already fully cooked. Just put it in with the corn and you will be fine.

    Great video Russ. I thought the temp was supposed to be between 143- 147 when soaking. I didn't see him use any ice or spray the pot.

      +Greg Jones Greg it does need to be in that temp range. He didn't mention it but he was hoping the frozen corn would be enough to drop the temperature down quickly but it wasn't enough corn, so we ended up helping it out by spraying the outside of the pot down with water. Normally much more frozen corn would go in at the very end and that too will drop the temperature fast
