I think the sound of the using the knife is beaubur it would be nice if you had some very very low and slow like piano or harp music playing along in the background. However absolutely NOTHING that covers the sound of your work with your knifes. Your technique is absolutely stunning to watch!
Hey Patricia I'm a woodcarver in Australia I'm in WA if you're anywhere near Perth we have a couple of guilds where we can teach you how, wandi woodcarving guild is the best, there are several groups over east too if you're there, do look them up, carvers are almost always very welcoming!

Probably it's katsura (Cercidiphyllum japonica), which is the one used historically.

If I had to guess, the wood is camphor, which is often used in Japanese wood carving.
