Iam unable to find any reviews about Himalaya 710 grade ply.. could you please suggest me if I could go with this ply or do I need to change the ply?
Unfortunately, even I m not aware of Himalayan ply. The market is flooded with too many ply brands. The best way is test out a piece of it in water for 11days. If it survives, it's a good ply.
Acrylic in any case will be durable but it's application has to be done via factory methods. It's ok to use Laminate but you will not get the same depth which acrylic would give. Both are ok in terms of durability, it's more about the ambience your trying to achieve or create.

Look for hardwares in Blum or hafele. Material anything is ok.
What is the price difference between acrylic and lacquered glass?
Can acrylic laminate be pasted on plywood directly with adhesive or it needs mdf in between for pasting?
Can be pasted directly. MDF not required.

Not advisable. may increase heights to an extent where it will be difficult to work comfortably.
