    If you want to know how to make Sri Lankan Style Tempered Potato (Aal Thel Dala, අල තෙල් දාලා), this recipe will tell you everything you need to know to make it. In Sri Lanka, we call this fascinating dish "Ala Thel Dala", one of the famous Sri Lankan dishes that we have on the table at least once a week. As my mother used to do, we made the dish using boiled potatoes. This is a great vegetarian dish, which can be served with rice, yellow rice, flatbread, paratha, roti, string hoppers etc.
    Ingredients
    600g Boiled and peeled potatoes
    Chilli flakes - 3 Tbsp
    Onion sliced - 3
    Green Chillies - 2-3
    Turmeric powder - 1/2 Tsp
    Ground pepper - 1 levelled Tbsp
    Salt -1/2 Tsp (adjust to your liking)
    Lime juice - ½ a lime
    Pice of cinnamon - about 2 inches
    A few curry leaves
    A few pandan leaves
    Cooking oil - 3 Tbsp
    Process:
    1. Heat up a pan and add 3 Tbsp of cooking oil
    2. Add cinnamon, curry leaves and pandan leaves and let them fry for a ½ min
    3. Add turmeric, salt and mix well
    4. Add boiled potatoes and gently mix well by using a spoon or tossing
    5. Make a well and add chilli flakes and fry it until combined with the oil
    6. Add onion and chillies and mix well for even coating
    7. Cover the lid and cook for about a couple of minutes
    8. Taste and adjust the salt and add pepper as well
    9. Mix very well and cover the lid and cook for about 3 minutes
    10. Add ½ a lime juice and give a good mix
    11. The dish is ready to be served. We had it with homemade bread, dhal and coconut sambal
