- Matzo Ball Soup is perfect for Passover or anytime you are in the mood for one of the most comforting soups of all time. We show you how to make the broth from scratch and then make classic matzo balls. The roasted chicken puts it over the top. Soup perfection!

Matzo Ball Soup Ingredients:
For the Broth:
3 lbs skin-on, bone-in chicken thighs or breasts
3 medium carrots, peeled and roughly chopped
4 celery stalks, roughly chopped
2 medium onions, cut into fourths
A bundle of herbs including bay leaves, dill, parsley, and celery leaves.
For the Matzo Balls
1¼ cup matzo meal (pulverized matzo)
1/4 cup chopped fresh parsley
2 tbsp chopped fresh dill
1 tsp Kosher salt
1/2 tsp black pepper
3 tbsp schmaltz (congealed chicken fat), or oil
1/4 cup chicken broth
4 large eggs, separated.
For the Soup:
2 large chicken breast, skin-on, bone-in
2 tbsp olive oil
Salt and pepper
2 lbs butter
3 medium carrots, peeled and cut into 1/4-inch slices
Salt, as needed
Sprigs of fresh dill, for garnish

@@HowToFeedaLoon Hi 👋🏻 Yes, I’ve made Matzo Ball Soup before. Did not make my own chicken stock, but I will next time. I also used seltzer water instead of egg whites for the balls, but I think your idea sounds even better. Thanks again for this awesome video.
My Mother would make this soup for us. Delish! The chicken breast meat and adding celery with the carrots is a must though IMO.

Nice, job guys. Chris, I hope you get over your cold soon. Do you let the stock come to room temp? before you chill it or just chill it while it's still hot?
Hi Jack! Sorry for the delayed reply. You can certainly let the stock come to room temperature. As you no doubt know, putting anything hot into the cold fridge could cause the shelf to bust. If it's still warm, we add several hot pads or even a small cutting board, and never had a problem.

We love Carnegies and Katz's so much! We went to a deli on the UWS...and we can't remember the name...but we think it was Skylight Diner. So good!!!
