I have one of these, love it... I think the twitchyness can be attributed to the bike being on the small size for you. My experience with it is that it rides like it's on a rail. Again, love the bike.
Imo I would move the friction shifter to stem mount., Longer quill stem. Maybe put some bigger tires. I find that steel is better off road. Aside from that nothing else Btw what is the weight of the bike since you mentioned it is light
It was a parts-bin build. If I hadn't changed my mind and sold the frame, I probably would have done bar end friction or even gavenalle hood-mounted friction.
