I think you should quilt them also to enjoy them. You can put some kind of acknowledgment on the label. My scraps from quilt shows are organized thanks to you 😉!
My inclination would be to quilt the quilts unless you feel they are very rare or distinctive. If they’re quilted, you can display them on a quilt ladder or even use them. I can’t imagine that most people would display just a quilt top. If it is rare, a museum may eventually want to display it as-is and in that case I wouldn’t quilt it. If you imagine it as being enjoyed by family, quilt them.
