- When Im craving home made pumpkin pie, but don’t want to spend half a day or more in the kitchen making it, or buy one… THIS is the perfect way to go! With just a few simple ingredients I usually have handy, and store bought mini pie crust… this recipe is easy, fun and so good! Less time spent on each step means more time doing something else… like enjoying them! The best part is a few of the secret ingredients of this recipe!

EASY MINI PUMKIN PIES - Nayad’s kitchen
Ingredients:
• 1 can pumpkin puree (15oz or 250 gr.)
• 1/2 cup packed brown sugar (100 gr.)
• ¾ cup heavy cream (255 gr.)
• 1 can sweet condensed milk (14oz or 397gr.)
• 1 large egg room temp
• 1tsp vanilla extract
• ½tsp cinnamon
• 2 TBSP pumpkin pie spice (or 2tsp ground cinnamon, 1tsp ground ginger, 1/2tsp nutmeg 1/8tsp ground cloves or all spice or both!)
• 1/8 salt
• 1/8 black pepper (optional but trust me its delicious w it)
* 3 packs of mini pie crusts (6 each) I used graham cracker mini pie crusts
Instructions:
1. Preheat oven to 375°F (191°C)
2. Prep the filling: In a large bowl with a handheld or stand mixer fitted with a whisk attachment- or simply using a whisk and mixing bowl- beat/whisk the 1 can of pumpkin pure, ½ cup brown sugar, 1 can sweet condensed milk, ¾ cup heavy cream, 1tsp vanilla extract, 1 egg room temperature lightly beaten, 2TBSP pumpkin pie spice OR (2tsp ground cinnamon, 1tsp ground ginger, 1/2tsp nutmeg 1/8tsp ground cloves,1/8tsp all spice) 1/8tsp salt, 1/8tsp black fine ground pepper. Mix on medium high speed if using a mixer or until completely combined and creamy. Cover and refrigerate while you get the mini pies ready.
3. Place mini pies on a baking sheet (this amount yields 18 graham cracker mini pies), add the mix making sure to not over fill. Bake for 20-25 min or until the tops of the mini pumpkin pies are set and the crust is lightly golden brown. Check the center to make sure it’s still jiggly.
4. Remove from the oven and allow to cool on a wire rack for 30 minutes, then refrigerate. Before serving, top with whipped cream and serve. Enjoy!

• sugar crystal cranberries
• whipped cream
• cinnamon dust

Yes. Adding pepper to pumpkin pie does sound weird. I'd have to get permission from the family before I did that. Hahaha..... Looks delicious though.
