You can make Lubb al kousa aka mtouamah, Mtabbal Kousa or what my mom does which is putting the pulp it at the bottom of the pot that she cooks the mahshi in. It turns into a lovely juicy semi-pureed pulp that you can eat with some pita bread or khubz bread. It also prevent the bottom layer of zucchini from burning. I'm sure there are even more ways to use it.
~8 medium sized Mexican zucchini (you can use yellow squash if this isn't available) ~1/2 cup rice (short grain is usually used but I used Jasmine) ~1/4lb ground beef (I use a meat grinder to grind my meat because I like it coarse grind) ~1tbs asfur ~1tsp salt ~1tsp 7 spice (add more all spice if you don't have this, makes life simpler 😉) ~5 tsp all spice ~dash of black pepper ~2 tsp cumin ~1cup oil ~2 tsp minced garlic ~ dried crushed mint ~1/2 cup lemon juice ~tomato paste

While saffron comes from the stigma of the Crocus sativus flower and is known for its unique flavor and deep yellow color, safflower (asfur) is often used as a more affordable alternative to provide color to dishes, though it does not replicate saffron’s taste.”

You can make Kousa jibn... basically bake mixed with beaten eggs & lots of cheese, season to taste. It's like a crustless quiche
For my fellow vegetarians, know that Impossible Beef and Beyond Beef work perfectly well and taste the same as the animal flesh.
My mom use to replace meat for a mix of lentilles and chickpeas "humus"...pretty good.

Thank you. I made this today. The soup turned out great, but the kosa and the filling was just bland taste. Its like no flavor at all.
I always add parsley, salt, pepper and lemon to the meat and cook it first then add the rice
