    POTATO-GRAVY CROQUETTES
    Makes 6 croquettes
    INGREDIENTS:
    6-8 cup neutral oil for frying
    ½ cup leftover turkey
    1 cup leftover mashed potatoes
    ½ cup instant potato flakes (or substitute breadcrumbs)
    1 cup leftover gravy (cold and congealed)
    1 egg, beaten
    ½ cup breadcrumbs
    METHOD:
    1. Heat 4 inches of oil to 325°F in a deep, heavy-bottomed pot or Dutch oven over medium-high heat.
    2. While the oil heats, hack the turkey into little bits, then mix together in a bowl with the mashed potatoes. Depending on how loose your mixture is, add in a little hit of instant potato flakes or breadcrumbs to thicken. The mixture needs to be thick enough to form it into a ball and hold its shape in the fryer. Not quite Play-Doh consistency, but close.
    3. Wash your hands, then scoop a golf ball's worth of mash into one hand. Press flat, then spoon a teaspoon of cold gravy into the middle. Gently form a ball around the gravy, then press it together firmly without smashing it. Repeat until you've used up your mashed potato mixture.
    4. Roll each ball in beaten egg, briefly allow the excess to drip off, then deposit it straight into a bowl of breadcrumbs. Roll around to coat.
    5. Once the fryer oil has reached 325°F, fry each ball until golden brown and crisp on the outside. Remove with a slotted spoon or strainer, then let drain on a paper towel for a minute or two before serving.

    These are fun and everything but just disappointed we didn't get a video demo of the Dave Arnold stuffing.

    Great Croquette video 🙂 pretty sure your potato dough mixture is sturdy enough to use a wrapper / tortilla press so figure to go with that and might as well cook them in a butter because that goes with breadcrumbs an any potato mix really although guess your heart would thank you for using canola oil lol

    I tried this, but forgot to use the egg. They just disintegrated slowly in the oil. I was very sad.

    How do you make this gluten free? I know I suck but it’s a real thing and it’s taken so much from my life it makes me angry. But is there a way to make it all gluten free?

      Don't use wheat flour in your gravy, use gluten-free breadcrumbs or some other gluten-free starch in place of breadcrumbs.
