Think the dude has a relay loop system, and not actually playing everything at the same time. Simply look at his right hand, visually not seeing any "boom-chick" fingerstyle pucking in the background to his lead slide playing.

Denver heard that draft and the three of them spent an entire night changing around the lyrics. Considering Country Roads is rooted in feelings of nostalgia, its actually pretty amazing they were able to condense those complex emotions and memories into a simple song.
