- Hatsukokoro kitchen knives are manufactured in Tosa, Japan using carbon steels like Blue #2 steel or White #2 and a variety of construction methods and finishes. These are high quality blades at good prices made by serious craftsmen under the Hatsukokoro brand name.
The Hatsukokoro series encompasses a wide range of knives, forged and crafted by some of the best knife makers in Japan. They work with a wide variety of artisans, from blacksmiths to knife sharpeners and handle makers. By working with folks who have mastered their craft, each aspect of the knife is carefully curated.
Techniques range from traditional hand-forging to modern roll-forging, with a broad spectrum of steels, both raw, reactive carbon steel and high-tech stainless steels. The maker and material are hand-selected to perfectly suit the intended line; be it an affordable knife for home cooks, or high-performance masterpieces for collectors.
Makers that contribute to the Hatsukokoro line come from all over Japan, a real fellowship of sorts. They include but are not limited to,Motokyuichi in Kyushu and Myojin Riki in Tosa.

When I first started watching this video my eyes went DIRECTLY to that Kiritsuke also! Love everything about it! 😍🤩😍🤩The rust doesn't bother me. I have a few other knives that do that also. It is what it is. Patina helps.... so just use it, enjoy it, and build up that patina. It's so beautiful, it's totally worth the extra care.

I have a couple of them, I have the blade second from bottom ( Kiritsuke ) and it is a really nice knife, highly reactive and the color is beautiful.

Baking soda and two drops of water. Make a paste and massage it in the blade with a toothbrush

How did the Shirahama feel, quality-wise? It looks like a Sakai blade and is rumored to be forged by Nakagawa but it’s a bit of a mystery. I’ve seen them for as little as $170 which seems like an amazing deal considering Nakagawa blades can run $300-600 easily.
Good video and nice knives 👍 the day before yesterday I was faced with the decision between Shiro Kamo Tora Gyuto or Hatsukokoro Rainbow Damascus Gyuto. Since I didn't know Hatsukokoro (especially the blade geometry), but Shiro it became the Shiro Kamo Tora. But if you show and explain the knives like that, there will probably be another Hatsukokoro knife soon after all 😄

I think my favourite series is the Inazuma series. I would NEVER bring it to work as it has iron cladding. But, they’re amazing performers. I have the 180 bunka. Incredibly thin, agile, and delicate.
Edit: I had to sharpen and strop it because OOTB the edge wasn’t good. But it probably has the most durable edge due to its AS steel.
Yeah, I think it's a mixed bag like why do you get out of the box? You know I mean just depends on the guy who made it for them but they're gorgeous.
The knife that rusted so quickly has a handle of snakewood. The one above it on the rack is wenge.
