PASTA CON RICOTTA E POMODORO, BEST EASY ITALIAN MEAL RICOTTA AND TOMATO

- INGREDIENTS
400G PASTA
175G RICOTTA
ONE CAN STRAINED TOMATO
4+ GARLIC CLOVES
RED PEPPER FLAKE (optional)
OLIVE OIL
SALT pepper
PARMIGIANO REGGIANO
start boiling water. in separate pan sauté garlic, oil and red pepper flake. add in tomato, reduce heat and simmer to cook off some water. add some salt to the tomato and a lot of salt to the pasta water. once sauce is done, turn off heat. cook pasta all dente, strain and add to tomato pan. mix in ricotta and grate in as much cheese as desired. add cracked pepper. mix all together
serve hot with a drizzle of oil and more grated cheese.

Made this tonight for the family, but used mini shells because that's what I had in the house, and it's sort of like exploded stuffed shells this way. It was awesome! My 14 month old is currently working through her 5th portion (so much for leftovers).

Very tasty and easy dish :) i would reconmend you to mix ricotta with sauce before you add pasta in. Doesnt really mater but makes it little bit easier to mix without making mess :D
That’s a good idea too! I like to let it cool a bit and use the pasta to aerate it but I’m sure it wouldn’t do anything but make it easier. Thank you!
