  • Today on Kwon’s Corner I’m back home in Daegu to learn how to make Korean side dishes with my mom. My mom taught me her special pickled garlic and pickled perilla leaves recipe, or jangajji pickles. They turned out so amazing. My mom has the best pickle recipe ever, well actually she has all of the best Korean food recipes. These pickles are vegan, sweet, tangy, and delicious. You should definitely try them!

    This is one of my favorite UA-cam videos. I love the song in the background ☺️. Last year made the perilla leaves, this year I am also going to do the garlic. I wish there was a way to get that big bottle of soju in the U.S. Are you still making videos?

    It was almost as if my Mum (UK Mom) was in the room. I've recently started growing perrillai. Now I know aprart from eating and cooking it, how to preserve what I know as Shiso. I've been eating it raw for years, now understand the next level :-) Please thank your Mum.

      I want to cook more with my mom, but since she lives far away it is hard to film. But I'll definitely make time in future. XD
      Most of my recipes are daegu style which are salty and spicy ^ ^

    I pickled the garlic and one jalapeno 24 hours before adding the soy sauce mixture. The garlic absorbs the pickling juice better

    Your Mom said something about not having to boil because the Soju preserves it. If we skip the Soju do we have to boil it? And if so, do we boil the juice before adding garlic or after its been in there a while or both?

    We dont have soju in our country, so what can we use as a replacement?? I would really love to try this pickled grlic

      If you don't have soju, you can either skip it or vodka, if you are using vodka make sure add half of the amount that I said for soju.

    Hey, I made this recently the way your mom described... but the garlic inside turned quite green. It has not even been a week yet however. I have read on the internet that it doesn't have to be bad and this can be normal for various types of garlic. Has your mom experienced this? Thank you!

      Oh no! I asked my mom, and she said depends on garlic it can turn into little green or blue but you can still eat it. Garlic will be less crunch but okay to eat. She also said if you add sugar on garlic for couple days before you follow this recipe, it will make garlic less spicy and prevent turning garlic to green.

    I'm super jealous, perilla leaf is really expensive where i live, last i checked it was about $6 or $7 for what looked like about 10-15 leaves. You've probably got like $80-$100 (maybe more) just in perilla there.

      It's okay but it won't be as tasty. So I highly recommend to add sugar.
