Thank you! I'm about to go pick up a couple more 3 pounders right now. Big party coming up this weekend so I'm doing three slabs of ribs and two tri-tip. These are a couple of my favorites for big parties because the ribs are only 5 hours and the tri-tip 2 hours so I don't have to be up all night cooking. Lol! Thanks for the comment! Another awesome cook senor! However I myself like to smoke to 130 then let rest for 15 minutes then sear both sides. Love tri tips! With that said ima need to try doing that artichoke like you did!
Yes, that's a great way go! Basically, a reverse sear. I also do this sometimes and I posted a video a couple of year ago where I showed how to do this by smoking it in the offset and then searing it over coals on a Weber Kettle. I love the nice dark crust you get this way. Dude! That artichoke was fire! If you like spicy, try adding crushed Chili de Arbol and lemon juice to the mix. Have fun my friend!

The bread was too thick and you needed to add more meat. But the Tri tip looked like perfection 💪🏾
