⬇️⬇️⬇️ RECIPE ⬇️⬇️⬇️
Start with 4 or 5 long potatoes
Cut of the ends and cut off the sides to make the potatoes
square but long. Cut the potato in slices about 1/8 inch thick
then lay those slices flat and cut strips the same thickness
so your fries are the same size as McDonald's.
Soak in cold water for 5 minutes then drain on a paper towel.
In a pot put enough water to cover the fries when laid out in
a big flat dish. Stir in corn syrup and sugar as the water comes
to a boil. I used 1/2 cup corn syrup and 1/2 cup white sugar for 12 cups of water. (adjust accordingly) Once the sugar is dissolved and
the water reaches a boil "turn off the heat" and drop in the fries.
Let them soak for 10 minutes then drain on paper towels.
Now place the fries in the freezer for 20 minutes.
Heat your oil to 350 degrees. (I used canola oil) drop in the fries
and deep fry them for 2 minutes only. Put then on a tray and let cool for 10 minutes. Drop them back in the oil for 7 minutes.
When they come out of the fryer lay the fries out and dust them with salt. Toss then a bit... and Enjoy!

sad to know it's almost 2 yrs that this guy passed away. I'm not surprised but still sad. This is my first time seeing his vid and u can tell he loves what he does. What a gentle soul. rip
He did loved to cook for people. Thanks for watching this video.😀👍
He seems like a really kind soul. RIP good brother.
That device looks like one of those old Vegomatics from the 1960s.
As I watched this video,I was thinking, this is the best and closest way to make fries exactly like McDonald's do.Maybe his are even better.I was quite sad when I read your comment and learned of his passing. My first time to see him too.I agree with you ,he sure did enjoy his work.Did it like a boss.May he rest in Peace.I will use his recipe in tribute to him.
🥺
My wife and I just made these fries last night, exactly according to your recipe, and they were honestly the best fries we've ever eaten. And now I just learned that shotgun red recently passed away, I was so sad but I will always thank you for the gift of this French fry recipe.
Thanks for trying!
How did he pass? Hopefully it was a peaceful one
Every time I find a good cook I find out they passed
No way I didn’t know, I will always miss his awesome cook vids
I will give this a try and that's too bad about his passing. I appreciate his sharing of all the great recipes.
Grew up in Idaho, worked at McD's.... I can promise you, this is not the McDonald's way, this is actually better.
Fills my heart with so much joy seeing that Shela is still liking every comment on this channel. May God bless you.
You deserve 2 hearts! :) Thanks for watching!!! :):)
Have seen this vid b4 …
This is my third ; fourth time watching this. .. he us missed. But he truly “does” live on…every time you do anything close to how he chef’s or purchasing a lodge caste iron skillet 🍳. ✌️. I did.
A great great chef. ..
Manga manga. ..
✌️
Great she is also cooking too. There's a big smile looking down on her.
Love this Guy! My aunt Beth worked at a McDonald's in San Bernardino in the late 60's & early 70's and she stated back them they added "beef flavoring" when frying and what they cooked them in was actually "Lard" at that time....we tried her reflection of the past recipe a couple years ago and they were absolutely "Dynomite"! You may have to look a little harder to find lard nowadays, but it's readily available in the Mexican supermarkets or meat markets. It's also a lot healthier than these "fake fat" oils the FDA has put over on us over the years. We now only cook in lard and my cholesterol has went from well over 250 down to around 130-145, so don't believe the hype about the fake fats! Bon Appetite!
I use bacon grease.
😊👌(No chefs kiss)
Thanks for the good advice. I agree, the FDA is full of bologna!
@@danielgodfrey4415 I do too, but only bacon from unprocessed pork bellies that I cut myself. The packaged bacon is full of chemical preservatives and other crap.
My mom always used lard. She lived to age 96.😊
Check your supermarket for Morrells lard. It's in the butter section. It's the best.
Just made these for my Granddaughter and her freind. They absolutely loved them. The legacy of Shotgun Red lives on 😊
Fantastic!!! Making memories!
Thank you Steve and Sheila for teaching me how to make McDonald’s fries!! I made them tonight and all my boys & husband LOVED them! Wow!!! We couldn’t believe how much they really tasted like McDonald’s fries 🍟
Thanks again!
I just recently learned recently that Steve has passed away (tbh I just found this channel a few weeks ago) and I am so very sorry to all of his family, friends, loved ones and to you - Sheila.
One thing I love about watching his videos is how he talks to and about you - Sheila, I know he loves you so very much, I can hear it in his voice. My heart breaks for all of you 😢

@@CookingwithShotgunRed Did you use Peanut oil?
Thank u so much Steve a and Sheila

Finally...someone actually uses sugar in making McDonald's fried. I worked at one MANY years ago and knew they coated the fries with a sugar mixture and no one before now even thought of using it. I will definitely be trying this out soon. Thanks.
Thanks for watching!
This fella... we need more sincere, fun, warm people like him!
Thank you!😊
Not a cook podcaster, but Cam Buckner who narrates the Dixie Cryptid story telling podcast is a gentle soul and has the most positive comments from fans that I have ever seen…just like this guy. The good guys are still out there.
The best fries I ever had in my life were in a restaurant I worked in as a teen. They peeled the potatoes, sliced them with a potato slicer, then let them sit in the refrigerator overnight uncovered. When they took them out the next day they were slightly brown. They were then deep-fried. The chef told me that when you let them sit and brown overnight it brings all the sugar to the surface. They were the best fries I ever ate in my life. I understand that Nathans used to do this with their fries years ago, before they processed them in a plant and froze them.
Bossmanrocks I also cut mountains of potatoes and set in large water bath bins over night in walk-in cooler. to be fried next day. those
Absolutely! i once did that by accident actually, i meant to fried them for dinner but i cant remember why i didnt, and end up fried them the next morning, omg! its the best!
Oooo yummy 😋
I've never heard of that
But yum yum sure sounds delish!
I’m definitely trying this, thank you
I thought about it and figured I’d add two things, try frying these fries in beef tallow, which is originally how McD’s did it way back or, if you’ve got a spare 30$ lying around, try duck fat
Isn't it nice to receive such wonderful comments over a video you posted nearly 3 years ago?!! They came out perfect by the way!!

Hello "Shot Gun Red Grill Meister", I just made the McDonald's French Fries, literally right now and they are all gone. My Family LOVED them!!! Our house smelled like McDonald's French Fries, but they were SO DELICIOUS!!! There were a lot of steps to follow, BUT IT WAS SO WORTH IT. Thank you for the video in showing how to do this. I will definitely make this again. WOW!!! Thank you again!!!

I worked at mikey D's back in the 70's. When you do the ice bath add the sugar then. Then you can skip the hot bath. No freezer, Everything else is spot on.
Would you agree that meat was of better quality back in the 70s in fast food restaurants? I read two people mentioning it. What is your opinion on this? :)
Sammay!!! Questions!!!
@@luckyshow98 Better meaning a higher fat content? You bet!

And McDonald's and most refused Healthy BEEF TALLOW to fry in and that's why they tasted soooo good.

This is another great recipe from the master chef himself!! I made these fries tonight. I followed the instructions and they turned out PERFECT! I am amazed at how good they are. I actually made 7 potatoes instead of Steve's 4. I wanted extra. It made the equivelant of about 6 or 7 large fries from McD's. They cost around $5 each. I made 6 or 7 for about $6 total. Pretty good if you ask me.
And hey.... would it have been way easier and faster to simply go to my McDonalds and just go in the drive thru and buy 7 large fries? Well of course. But that takes all the fun out of it. I love cooking for my family. I'm always trying new recipes. It's a labor of love, that's for sure. We don't cook because we have to. We do it because we love to! Thank you so much for such a fantastic recipe. Will definitely continue making in the future. God Bless!❤
Glad you had a great time making this recipe! 👩🍳❤️👩🍳

I've been water-soaking and oil-blanching my fries for a while, that's definitely the way to go. Don't think I'd be dedicated enough to McD's to go the extra mile with the sweetened water soak. Beautiful work!
Thanks for sharing!
Steve had such a great personality. A very down to earth kind of guy. Sometimes I watch videos I've already seen just to listen to him talk.
I just found this channel, your videos are AWESOME! VERY sad to hear Red passed. Thank you Miss Sheila for continuing to make videos ❤️
You are so welcome Ann!!!! Love that you are here!!!😋👍 shotgunred.com
Wow, that is just fantastic! Here I am, drunk across the Atlantic and watches this video. The youtube
algorithm once again gives something truly genuine. The one thing I love about this guy is how he takes care of his
ingredients and uses his knife with such care and control and not for a moment I'm concerned of him chopping of a finger or making a mess. True control, love that. This guy could be making tutorials of making grandiose dishes from all over the world but instead he makes tutorials of fast food "junk". But the energy and how he truly explains to the audience in what way he loves this type of food is captivating. Inspirational in a way. Follow this guy´s energy in the field that you love and you will probable come far. Maybe not to the top but really close to it. Damn, this really made this night worth it. Thank you.
Glad you came across this video! :)

Fascinating! Saving this recipe for the next time I make home fries.
Malcolm Gladwell did a nice piece on how McDonald's fries used to taste even better than they do now, when they fried them in beef tallow. Of course, the twist is that beef tallow was actually less harmful than the linoleic acid-filled vegetable oils they now use.

I thought the sugar/syrup stage was a bit crazy, but decided on blanching the potatoes in boiling water with a teaspoon of golden syrup (partially inverted syrup) and a teaspoon of salt. They cooked for around three minutes, then I took them out. First fry for ten minutes at 150 celsius, then a final fry at 190 celsius until they were golden. Absolutely perfect. Not sure exactly what the sugar solution did, but they stayed crispy even after they had cooled down. Thanks for your advice and tips! I think I have cracked it thanks to your advice! Awesome, Shotgun Red! (such a cool name, I wonder what inspired that!).

They used to call small fries like this shoestring potatoes....McDonalds fries are the best for about 10 minutes after you get them, and then they degrade rapidly as they cool
I prefer steak and shake's shoestring fries. theyre still good even cold.
That's very odd... I have never in my life heard of anyone calling a fry as large as a Mcdonalds fry, a "shoestring" fry. I have only ever heard of fries about a quarter to maybe one-third of that size being called "shoestring" fries. Can you describe when and where people called fries as big as Mcdonald's fries "shoestring" fries... I'd like to look into that matter, and why it changed.
Air fry them.
It’s not the same, but at least they’re salvageable.
David Garza you're absolutely right I always reheat them that way or in the toaster oven. Works every time.
You have an excellent clear speaking voice and explain the whole process perfectly. Kids are waiting for me to make them. Thank you.

These fries are superb, I had to adjust the recipe slightly as we don't have corn syrup in the UK. My grandchildren live 40 miles from their nearest McDs so this is going to be a treat on my next visit once our lockdown is lifted. Thank you for sharing

I tried it with an airfryer! I did everything like you did it, except the frying part. It worked perfectly. At first I fried them in the airfryer for 10 minutes with 120°C. It makes them dryer and soft from the inside. After that I added a little oil and fried them again for about 7 minutes and 180°C. They are sooooo delicious and taste exactly like the Mc Donalds French fries! THANK YOU SO MUCH!
Great job!
Great video. The real trick though is to never throw out your oil. I've been using our family oil, passed down to me from my mother, who received it from her mother and so on. Several generations of fry fat in every batch gives 'em that depth of flavor you just can't get elsewhere.
True! :)
A couple of kitchen items you could use to make this go quicker: an adjustable mandolin slicer and a salad spinner. The slicer allows me to get the perfect thickness consistently and quickly. The salad spinner allows me to dry the potatoes quickly.
Great idea!
I use the salad spinner too. So easy.
you can also change the play settings of the video at 1.25 or 1.5 speed :-D
Why not use a hair dryer
Awesome!! I never knew how much the blanching process made the fries super crispy.

I make a big batch at a time and freeze them after the first 2 minute blanch fry. It works out great.

I don’t know how you figured that out but God bless you! I can’t wait to try this at home. Seriously my mouth is watering already. Mmm.
You can do it! Let us know how it turns out for you!😀👍
Wow, thank you. I'm going to make these tonight! My husband and I love McDonald's fries, but we would rather get our rest of our meal elsewhere. It's just so monotonous and emotionally taxing, cause dealing with some drivers in traffic can be so frustrating, to have to go from restaurant to restaurant to get what we want to eat. We don't eat out that often so we don't want to have to go through that much of a hassle when we do. Oh and I love the idea of saving the ends and pieces and cutting them up with the skin and frying them at a later time for a different meal. God bless! 😊
I know.... That's like going to grocery store. You have to go to 10 different ones to get enough stuff for several meals that you like.
This is so very wholesome. I enjoy his engagement and advice throughout the video :)

Shoestring french fries. The best way is to cut them by hand. I'm a cook by trade as well. Tuning in from Wilmington Delaware 2020.

Just saw this, I’m going to try it. Sounds amazing.
I have been cutting and home frying French fries since 1979. I couldn’t care less if they are long or short. Sometimes cut thin and sometimes thicker but it helps to make a bag of russet potatoes go farther with no waste. I agree with mixing so lard in with the French Fry oil for a really old fashioned taste.

Have you tried these ? Do they taste like McDonald’s ??
cant wait to try this!
I love this video, the enthusiasm and enjoyment makes it even better. I want to try to make my own Mc fries next time the family are over. A True Legend.
Thank you! 😃
McDonald’s Fries 🍟 are good but they can’t be reheated. They just don’t taste the same as before. So you gotta eat them while they’re HOT 😄
I'm going to buy some McDonalds fries and reheat them in the Air Fryer we got recently. That should reheat them without making them soggy.
You can reheat in an air fryer.
when you order your fries tell them not to salt them, reheat and salt them at home . they taste better that way
Notsofast hmmmm sounds fishy
AGREED!
