Beautiful dish Chef....Bravo! It has such a beautiful, wavy, rich mahogany look and I can just imagine how wonderful it tastes. The very least we can do when we kill an animal for food is to show reverence by using every part of that creature. It’s where I get my 5th quarter meat, tongue, trotters, tripe, etc. will get some pigs ears and try this.
