Homemade Chicken Enchiladas [In A Verde Green Sauce]

  • These verde enchiladas are great for lunch, brunch, dinner and everything in between! If you were looking for an easy Mexican dish look no further. What makes them perfect is the tomatillo chili verde sauce. Recipe Below:
    Verde Sauce Ingredients:
    1lb Tomatillo, peeled & Quartered
    Water
    2.5 Tbsp Oil
    1 Sweet Onion, Quartered
    7 Cilantro Stems
    5 Garlic Cloves
    Handful Shishito Peppers. They have a very savory and mild taste. (You can also use 2-3 Serrano Chilis or even Jalapeños)
    Salt to taste
    Verde Sauce Method:
    1. In a medium saucepan, add in tomatillos (cleaned, peeled, and quartered), cover with water, and place over medium-high and bring to a boil. Reduce to a simmer and cook for 5 minutes.
    2. Heat a large skillet over medium-high and add enough oil to coat the bottom of the pan.
    3. Rough chop shishito peppers, onion and garlic. Add to the hot skillet. Sear for 1-2 minutes. Flip and repeat on each side.
    4. Remove tomatillos and place them in a bowl along with the seared shishito peppers, onion and garlic.
    5. Add onions, peppers and tomatillo to a blender along with cilantro stems. Blend on high until completely smooth.
    6. Season to taste with salt.
    7. Dip tortillas into the sauce covering both sides. Repeat with remaining tortillas and let sit for 10-15 minutes.
