Great tutorial on how to use the lock but the reason why it rubbed it because D&D recommends a minimum gap of 16mm (5/8") between the gate. Looks like you have around 10mm . The adjustments on the striker (catch) you mention is more for re-aligning the striker due to gate sag over time. Yes it can be adjusted for expansion and contraction due to weather but if the lock is installed with the minimum 16mm gap, it shouldn't cause any problems as both striker and lock side of the fence should expand and contract at the same rate and still be clear of rubbing.
