The lattice is more powerful volume wise, it has about the same treble and bass frequencies, but I perceive much stronger mid frequencies that give the sound more "body". Many people love it, specially the more modern music players. The classical players sometimes find the sound too different from the tradicional Torres derived guitars. I have reverted to the Torres style in my building, but I made hundreds of lattice guitars from 2000 on. The one in the videos was a special request from a client that has already two of my lattice spruce top guitars, but he wanted one in red cedar.

I generally use around 2.5mm for spruce tops and around 2.7mm for the red cedar ones. That's the sanding thickness. Before the finish I always thin the perimeter of the top a bit by scraping and tapping and listening, but it is kind of a ritual with no scientific logic, just me trying to get more responsiveness from each individual guitar, maybe it works. Ha ha ha!
