Line on a tray, cover with a transparent soft cloth like the cheese cloth and put in sun It may take some good days to dry depending on the weather outside.
I really would like to try the dried jackfruit. I will ty it one day

I can see that you do not use the one that is very ripe
It's ripe but like the freshly ripe that is sweet and firm . Don't use that is over ripe that is soft.
I tried it though mine got burnt in the beginning.
I had put alot of heat, later reduced then they came out well
