Vegan Congee (Jook, Rice Porridge, 粥)

  • Here's a vegan version of one of my favorite comfort foods, congee (jook/rice porridge/粥). One thing I didn't mention in the video, is that I usually dig out the lemongrass and large chunks of ginger and garlic before serving.

    Instead of using chicken, pork, or dried seafood, I used shiitake mushrooms, lemongrass, ginger, garlic, and vegetable broth to flavor the jook.
    INGREDIENTS:
    1 cup jasmine rice
    6 dried shiitake mushrooms
    4 cups water, divided (use 2 cups to soak mushrooms)
    5 cups vegetable broth
    2 stalks lemongrass, sliced into 3 to 4-inch chunks
    2-inch piece of ginger, peeled and sliced
    1 teaspoon kosher salt, add more to taste
    TOPPINGS:
    white pepper
    hot sesame oil
    soy sauce
    sautéed shiitake mushrooms
    furikake
    scallions

    Lisa Lin, what a fabulous recipe, thank you! I'm definitely going to start making it. I'm just getting over an illness and was told that eating congee / jook would be good for me (easy to digest). Yours looks really delicious; so, I'm going to try it, minus some of the things I can't handle yet like the hot sesame oil and the fried dough sticks. 😆 The ginger, the lemongrass, scallions and the mushrooms should be especially good for me right now. One thing people with delicate stomachs / health should be careful to check out are the ingredients in store-bought flavorings, especially in pre-made bouillons, etc. It may be a bit of a pain to make your own from scratch, but it's worth it. 😋😌🍛

    Years ago I lived at a Japanese temple for a few months and ate some type of purple Japanese vegan congee everyday.. I honestly miss it so much now that I’m trying to go towards a plant based diet😭

      1 Ngo - There are purple-colored types of rice out there. Perhaps, they used one of them?

    Looks great although washing rice is required to get dirt out as well. I bet your dish was really flavorful. I think the dark color is a bit less desirable than white congee with toppings piled on though.

      You should be able to, but I'm not 100% sure what the cooking tiem would be.

    How does brown rice work compared to white rice?

      Brown rice will take a lot longer to break down. It's possible to make with brown rice, just much longer. The texture also won't be quite as silky

    There’s also dirt/ impurities in almost all packaged rice, regardless of type or source. So you’re not just washing it to remove starch

    Real Asian children never forget to wash rice atleast 2 times. Seems like you've had a nice and carefree childhood and far away from any cloth hanger or belt XD

    "it's super easy" .. meanwhile, me living on the countryside of rural Europe needs to drive at least 1h to get either dried shiitake mushrooms or lemongrass (which also is quite expensive around here) and the seasoning you're using I've never heard of in my life 🫠😅😅 but yeah.. some day I'll try it out 🥲

      But the great thing is that both shiitake (dried) and lemongrass (which you can get frozen) can stay good for a reaaaaaally long time, so if you do make the drive to get the groceries, you don't have to worry about them getting spoiled!
