I keep applying for unity development positions and I almost never get picked. What type of projects would it be worth having on my resume in order to get an interview.
It's less about projects and more about experience, they are looking for someone with years worth of experience and company work. My advice would be to freelance under an LLC and therefore have official job experience.

I got three years of experience working with an indie company making games and releasing them on steam. Now I'm not with that company anymore working odd jobs that have nothing to do with unity development. Which is just creating a giant unity gap in my resume.
You're selling yourself way short. Your income is way above the average income in the US. You have to have a really large UA-cam channel or very successful games to make that type of money. You're doing great!

There's nothing like on the job training, I would start a small freelance company and identify a target client and send 10-20 emails a day pitching Unity development to them. Whether it's VR, AR, or Metaverse, more and more companies are using Unity as an application development tool than solely a game engine.

It seems to me like the salary is pretty low for a fairly skilled and not super common skill set. I would love to be a Unity developer as a career, but I can't really afford the pay cut.

No degree but i think if you want to get one itll never hurt, a degree alone doesn’t make you good though
