A cover only in the sense that what Beyoncé made was a cover of the song written by BC Jean and Toby Gad, originally performed by Jean in 2008. Beyoncé's cover was that same year.
In this video the pianist is Toby Gad .. the Piano Diaries are a celebration of his hit songs. He invited Angelina to England with him to perform .. this is the sixth version I have heard. I am not sure if it is really a cover when a singer is standing next to the composer as they jam to create a different version of the song.

I love Angelina's live performances, she is really noticeable live and she feels much more motivated in front of the audience than she in the videos. I find the discussion if that's a Beyoncé cover or not quite tiresome. Yes, Toby Gad wrote the song with BC Jean, for BC Jean to publish. She was however unsuccessful, in getting her record label or any other label to publish the song. So I think she released it on some samll music instead website, and it had thus little to no reach. Beyoncé certainly didn't did it hear on the radio, or anywhere else as published. She heard it because Toby played it to her when they met in her studio, like he would have done with any unreleased song he offered to singers as a songwriter. He possibly thought of it as unrelased himself (and maybe it even was at that time, I'm not sure).
It's common to attribute a cover to the original singer (instead of the songwriters), or the one that made it popular. Beyoncé did certainly the latter, and neither Toby nor Angelina covered it now because of BC Jean's version, but because of Beyoncé's!

Toby Gad is one of the co-writers and is the one playing the piano. The other co-writer of the song, BC Jean, was the first to sing the song as well as the person the song came from. The man that she was in love with had just broken up with her. Per Toby, he played it for Beyonce one day and she really wanted to sing and use this song, and the rest you say is history.
