I remember when I came across your videos about 8 years ago, I was in university back then, and trying to find some cheap ways of cooking for a student living in a dorm. I remember you had a nice Mexican dish and I commented on your blog about it. I just wanted to say that 8 years later i'm still watching and always super excited to watch how super funny and humble and chill you are. 8 years later i'm now a chef and am still using some of your recipes. Watching Hilah videos weekly makes me remember when I was 22, drunk, and watching her make videos in that weird orange kitchen in Texas. So happy you’re back. I’ve listened to your podcast since you left but I missed your UA-cam self.
Just watching this, while Cooking myself, I felt my game go up a notch. This video is just like how we originally learn to cook watching our family. Experience teaches; even just visual experience. The number one thing I missed about your videos was how casual, yet informative they are. You talk to your viewers like we're there with you in your kitchen. You have the high production value, but the humble and genuine personality of an early UA-cam chef filming with a 12 megapixel digital camera perched on a stack of cookbooks. And yet we still learn so much! Not just one single recipe, but many tips and tricks that can apply to countless other recipes. You were greatly missed and I hope you know that you are so dearly loved.

I always use sherry for risotto. Works perfectly fine and keeps much longer than wine.

Hi Hilah 👋 In Italy we pronounce "risotto" as ri'z'otto and the double T pronounced as a strong T. I make risotto with pumpkin, too and traditionally we use sage or rosemary with pumpkin preparations. I'm so glad you're back..... ❤ from Florence
Fellow insomniac here. It's not fun, for sure. Over the years I've learned that the more I fight it, the worse it gets. So on those nights where I can't stay asleep or even fall asleep, I just turn on the TV and watch either Looney Tunes on the Boomerang network or old SpongeBob Squarepants episodes on nick. It makes me less stressed about not sleeping. :)
That dish turned out beautiful! What a gorgeous color too! Love butternut squash. Also love the toasted rosemary on top. This would be a great side dish for the holidays! I often do the same thing when I'm cooking, just 'wing it. I keep post-it notes in my kitchen so I can quickly jot down what I did so I can recreate it. :D
I had one of them butternut Squash once.I mostly looked at it though,as I'm from the UK.
Had a rough idea to use it as a snowman's nose,but it just rained that winter.

I was working at a music and video store in Santa Barbara when Jesus Jones' second album with "Right Here, Right Now" arrived. ... and a month and a half later R.E.M.'s massive album Out of Time dropped and pretty much put Jesus to bed. Played that R.E.M. album every day several times.
