Balado can be translate as chilli paste... If you try the food from central java the spice level are not to spicy, but from eastern java the level of spice is more high.

All these foods, especially vegetables, are usually eaten with warm white rice.
The menu for one serving is usually rice + vegetables + side dish + chili sauce.

Also - with locals speaking Dutch, there's plenty of Dutch speakers in Indonesia, especially the older generations. My grandmother spoke Dutch. And there have been plenty of exchanges of words and languages between Dutch and Indonesian peoples. I realised this when I went to the Netherlands and saw words like 'spoor', which in Javanese ('sepur') means trains, instead of tracks. So it's not one-to-one translation, but very close. Or food words like 'buncis/boontjes', 'perkedel/frikandel' and wortel is wortel.

Hello Susan.. When you eat javanese food, you need to try to mix them with rice. Just get some of sauces, and mix those sauces with rice. Actually, it goes with almost all Indonesian cuisines. Not only javanese. Just mix those sauces with rice. They are intentionally made strong for that particular reason.
BTW, you can try another type of javanese sambal, like shrimp paste sambal ( sambal terasi ). Tomato sambal is actually for those who are learning to try sambal for the first time. People usually find many kind of other javanese sambals, like shrimp paste one, or onion sambal, or if you prefer, sambal cobek. It is the equivalent of Balinese's sambal mattah, but of javanese origin. Careful though, because sambal cobek is really spicy. It's chili in its raw, crushed, and its main ingredient is a couple of birdeye chili, a rank 9 at scoville level.

Perkedel trully is derived from Dutch word "frikadel, frikadellen" -- The difference is, Dutch frikadel contains more meat, and Indonesian frikadel (=perkedel) contains less meat or even without meat. The word perkedel coming from the difficulty of most Indonesian to say frikadel. Frikadel >> prikadel >> prekedel >> perkedel or even bergedel.

Indonesian lauk (side dish for rice) always have rich taste, salty, sweet, spicy, savory, even sour or bitter etc. Lauk always have strong flavour. Yeah because it has to eat with rice (rice/lontong/ketupat/noodle etc side dish)
Lauk can be beef/poultry/fish dish, vegetable like tumis or sayur kuah, gorengan like fried tempe or tofu etc
If we wanna eat lauk without rice yeah we can make it by ourself. Bcs in warung, they sell lauk with strong flavour.
Savoury jajanan like lumpia, risol, martabak telur, siomay etc you can eat it without rice because it is jajanan/snack. (But sometimes we can eat it with rice too)

Almost the same fame as warung Padang. Lots of food options.
Or Pecel Lele (catfish), you can find at tent vendors.
Famous cheap food for students and labours.
Come to Bandung, sist! 🤗 Culinary trends here are "pabalatak" (messed up, meaning everywhere)
Traditional famous hot beverage called Bandrek and Bajigur are nearly extinct.

About the pare (bitter melon), you are supposed to eat it as a companion. Eating it with rice, some spicy protein, krupuk (chips), and of course some sambal would bring an umami sense from the pare which would make your whole dish more appetizing. Btw, not everyone can prepare and cook pare properly where the bitterness would be just a light note and not a strong kick. Love your video introducing Indonesian culinary, keep it up!!!

Indonesia way of eat is to mix all of those food and rice (like 1 spoon rice, bit of veggies, bit of protein and eat it together in one scoop). So it would be taste different if you eat those alone without rice and other dish. Especially for the bitter melon veggies, because it's so bitter if you eat without rice, but delicious if you mix it with rice and other dishes XD
