Your wall of text problem is two-fold. 1. You have too much space to write text, so you will write a lot of text to fill up the space. I'd recommend reducing the amount of text that can fit anywhere. Just make your text larger or make the panel it's inside smaller. 2. The writing is very repetitive, full of filler text, and generally poorly structured. Lets look at this portion of text from the video:
"You will need to equip yourselves with the tools needed for survival in the wilds, as well as the ceremonial items necessary to carry out your rites. The Blacksmith and Shopkeep are awaiting your arrivals. Go to them and they will get you ready to begin your journeys."
"You will need", "the tools needed" is redundant. You don't even need to put "you will need to equip"... just say "You'll need proper tools". "As well as" is totally unnecessary filler. "items necessary" is again just repeating what we already know. You've got "need" "needed" and "necessary" all in one sentence. The last two sentences can just be reduced. Here's what I came up with:
"You'll need the proper tools to survive in the wild and the ceremonial items to carry out your rites.
Travel to the Blacksmith and Shopkeep who await your arrival."
Here there's just one "need" in the whole paragraph. I also removed the "to equip yourselves" because... that's pretty obvious. Got rid of the "as well as" because we can just include that with "and the". Got rid of the "necessary", as it goes with the "you'll need" part. The last sentence is just a way shorter example of what your text was saying in two sentences.

You basically summed up the biggest issue that people who don't write professionally (And some who do) have when it comes to writing.
Don't try to make stuff look and sound fancier by making every sentence painfully long. This could've been improved even more by just having someone like the barkeep tell you: "Hey, you're going to need some tools. Go check out the blacksmith and the shop before you go out."
It sounds casual, and it should be, considering you're speaking to a barkeeper and not to a character of a Shakespeare play.
Another added thing is highlight any thing that could be considered important with it's own color. Lets player filter the useful info out of the conversation. In the line of dialogue I wrote, highlighting tools, blacksmith and shop would've been enough for player to put 2 and 2 together.

Gonna be honest: the font makes me not want to read anything. 8:38. "Youwill need..." what's with kerning? Why lowercase y is so small? Why "Nikomi:" looks like "Nikomii" or "Nikom::"? Why "r" looks like ト? Why 't' looks like +? Why 'q' looks like '🔍'? Why 's' looks like '5'? Why there's only ~3 pixels differences between 'a' and 'o'? Small retrostyle font and outline do not work together. I literally can't read what's written: on my first attempt I read "blacksmith" as "blocksmith" and was like "huh?" also I had extremely hard time figuring out where one word ends and other begins.

The new battle backgrounds are beautiful, definitely an improvement (since I believe that the "unfitting" backgrounds were the limiting factor in the previous designs)
Although, for now, my main criticism is how the overworld looks at the moment: some of the areas look too...blocky? The way the rivers and paths connect don't feel very natural, and that makes it look kinda weird to me.

Am I the only one that prefers the old style where the things where clearly named out at around 3:50 ?
Like sure, the new one looks more colorful, which realistically, color could still be kept anyways. But I just hate it when devs assume I have to have their own interpretation of what icons are supposed to mean.
For abstract things, sure that can work, that's a design language the player has to learn eventually, so like how in Pokemon a green leaf means Grass Type. But for things like options to use THAT symbol for example? At least stick to universally used stuff, options are a cog wheel, dang it!

Some great advice here in the comments. But here is another, Learn from Zelda, the Zelda games would highlight important words or phrases if there was important info in text. Its important to separate lore from instruction. This can be done by giving important things an item (like a guide book, a note, or repeat instruction in a quest log.) that can revisited or re read. If you have time cutscenes are also good. Lastly, this is 2022, some things are second nature to gamers try to avoid explaining too many basic features in your unskippable tutorial. Once players enter the "blah blah blah" phase they tend to never leave it, so keeping things bitesize is important. The best tutorials feel like gameplay.

Ok. So what i get from this is don't go to steam. No but seriously. A good way to have the dialogue that you want and still show off where to go and mechanics would be to have small points of well hidden signage or directions. So a sign that has a pickaxe that leads to a bunch of rocks and a small image showing how to actually mine. Doing stuff like that I feel you could fill out your environments and make them more "alive and diverse"
