Vermithor looks more like smaller vhaegar than anything. Meyles is definitely a wolf type like caraxes with their skulls being more similar (even though caraxes has a mutation. She’s older and somewhat more lean than Seasmoke who is a dinosaur type which is the most common. Pretty much is they don’t look like Seasmoke, arrax, drogon, rhaegal, vesirion, tessarion or belarion it’s probably a wolf or horse type. Just my thoughts!

the only reason Meleys is so fast is because of her muscular build, out of all the dragons in HOTD Meleys is the bulkiest like she always be hitting gym that's why she is faster compared to the others, shes no flyweight when she is all muscle
Meleys was the largest dragon team black had before Silverwing and Vermithor got claimed. She was no flyweight, she could take down almost any of not all of the dragons during the dance due to her size and speed. She’s very bulky and armored making her one of the best dragon for dragon on dragon combat.

Meleys speed is one of the reasons she should have won against Vhagar (her agility is another reason) because she wouldn't have had problems getting behind and above vhagar. From this point there would be nothing vhagar should do to get away from her because Vhagar is not able to do barrel roles at her size and age like eagles do while Meleys is.
problem is the whole fight vs Sunfyre before. That was surely exhausting to begin with. And on the initial attack where Meleys DID do the barrel roll Vhagar caught her on the foot and got a hold of her and they injured each other heavily. At that point speed and agility becomes a lot less important than endurance because at that level of exhaustion and injury you'll never be able to continue that
To be honest, I don't think they portrayed Meleys' speed well enough. Outside of that brief scene in the escape sequence in S1, she flies like any of the other dragons. I think we needed more scenes or better speed showcase in season 2. Even episode 4 in the fight with Sunfyre & Vhagar, her speed wasn't that much of a visual highlight. I've seen different types of birds fighting in real life in the air already and the faster bird's speed is incredibly quick and undeniable compared to the others. Meleys portrayal is more like 1.15 times faster than the others. Not even her reflex was fast when thinking back on the Vhagar ambush.
I think the speed for Moondancer is a bit off considering it was a moving shot. The horses had full armor and heavily armored knights so their max speed isn’t really affected only their acceleration. So sure if these horses were galloping at full tilt around 40 miles per hour, and considering the camera was moving at the pace of the horses we should add 40 mph to the speed you calculated. IMHO, Moondancer was moving between 190-200 miles an hour.
Vhagar's speed in the show is very confusing, she should be slow due to her age and size, however, she has no problem catching up with Arrax, SilverWing and Meleys (the fastest dragon in the kingdom), all of them more agile dragons.

However, I’m wondering how they are able to fly without any type of protection at those speeds. Is it the old Valyrian blood magic or some magic in the world we just don’t know? Or is it something that the dragons are able to control for their riders to be comfortable? I’m open to any theories as well.

Your math is probably correct and it makes sense in the context of the show. For example when Vhagar follows Silverwing to Dragonstone. It would be a pretty weird scene if this chase was going on for 3-4 hours, but at speeds of over 300km/h it makes sense. But seriously did someone ever hold his hand out of a moving car or his head or drives a motorcycle. The winds would be insane and you would have a hard time holding on to your dragon. Edit: Those speeds might even be realistic. Some birds have cruising speeds of around 150km/h. The dragons are still twice as fast but fantasy I guess.
They are tied down to their saddles, but it’s true that the wind hitting their faces would be way stronger than what is shown on screen, it might even be painful.
I doubt they are as fast as 250mph. Have you tried sticking your head out of the car window on the motorway? Anything above 50mph takes your breath away. Impossible to see properly too. You'd need some sort of enclosed mount with a windscreen or at the very least, a biker helmet.
Would be really funny if they all had wind screens and eye protection. I am really glad they added sattles in the show, no way Dany rides Drogon the way we see in the show without falling down.

But MindQ has some of the most accurate size estimates of these dragons and measured the time it took the dragons to fly their body length across a fixed scene which calculates a fairly accurate speed. Most of these dragons flying between 150-300 mph seems quite believable for creature their size and the corresponding lore.

Anatomically, they have massive breast and shoulder muscles and bones reinforced with high levels of iron to provide extra rigidity. We also know very little about if their muscles function and fire the same as ours, if they have flight bladders or their mass. Based upon the aspect ratio of their wings and how small their bodies are in relationship to their wings, I’d assume their wing loading is proportional to that of an eagle, vulture or buteo. But chances are, probably not.
