We know Molly loves cae sal, and we know Molly loves sandos, so it only made sense that she should develop a chicken caesar sando. This recipe takes the same elements you know and love from a classic chicken salad sando, but takes it up a few notches with the addition of creamy caesar and lacy, crunchy frico. Tune in to watch what happens when parmesan browns and crisps atop a hoagie roll, and to hear a catchy new jingle. Orkin, please call us.

Ingredients :

2 garlic cloves
2 lemons
2 celery stalks

¼ cup mayo
1 tablespoon Dijon mustard
4 oil packed anchovies
Kosher salt, freshly ground black pepper

2 dill pickle spears

Pro tip, if you hate celery like I do some diced up crunchy pickles or cucumbers are both really good in chicken salad.
I recently changed my Mom's cold chicken salad from cubed to shredded chicken for sandwiches. I'd highly recommend giving that a try (it's more of a pita of course). I like it cubed when over greens or by itself, but shredded changed the sandwich game. Gonna try this recipe and I may also add some red onions (her's has them for some bite)... not sure if that would work with the Caesar game though. The Parm action is blowing my mind though... can't wait.

The only change I'd make here is to try and shred or otherwise mash the chicken fibres up a bit. Cleanly cut cubes in a chicken salad isn't my personal vibe

This seems like the kind of sandwich that is freaking amazing for a few bites and then starts to get overwhelming with every bite after that. I would probably pair with a nice neutral side, like some pickled onions and a nice cucumber salad.
Looks very dry with all that bread. I think you're right with pickled onions. They'd be a nice addition to bring variety and moisture.

Ι think the chicken would benefit from a smaller dice (you could hollow out the hoggie a bit and keep it chunkier, but then how do you get the parm to stick on it...) but this one I'll be making, for sure :)

hm, idk about cubing the chicken, I could lose entire pieces of chicken while picking it up. I think it might do better to hand shred the chicken into thin strips,

Shredded chicken > cubed chicken. That's a lot of salt: double cheese, anchovies, and kosher salt. The sandwich lacks color. Maybe incorporate green into the dressing.
Next time scoop out the bottom portion of the roll to create a pocket for the chicken salad to rest in and form. You're welcome.
A little work on the audio would go a long way!

Why not show the poaching? It’s a simple technique that can easily be done poorly. Sandwich looks good but agree that it might need to be quite small. Caesar isnt something I want to made into a sauce.
I prefer a torn up chicken instead of cutting them into cubes. They look too geometric and fake when you cut them into cubes.
