It seems the price of meat must be too high for most of them, they’re taking piles and piles of rice with only a handful of lamb on top. The inflation in the world is crazy everyone is suffering, I bet 5 years ago they had a great serving of meat with their pilau
Lamb fat, Beef or mutton, carrots, a bit of onions, cumin, raisins, garlic, whole chilli peppers and chickpeas. Recipes vary, but traditional recipe has these ingredients. It’s more than enough to make it authentic. Rice that should be used called lazer, kinda similar to Jasmine.
Meat is given at end. There is a set portion for the rice according to weight. Extra meat is extra price. Its actually very affordable because we grow all the rice, meat and vegetables inside Uzbekistan.
Suggestion only, i think this guy can use a bigger knife. There are plenty of variations of knife for cutting large meat. I enjoyed the entire show though. I Love it!

육류(고기)은 대부분 기름기와 피를 많이 빼고 음식을 조리해야 합니다. 특히, 기름기와 노랑내가 많이나는 양고기와 염소고기 위주로 키우기에 따라서 소(소고기)도 기름기와 노랑내가 많이 날때도 있답니다. 육류중에 기름기와 노랑내가 나면 아무리 매일매일 깨끗하게 목욕을 해도 사람 피부의 땀구멍과 입속에서 오랫동안 악취가 나고 심지어, 세탁기에 세탁을 해도 옷(상의, 하의)에 육류의 기름기. 노랑내 냄새가 나고 입 목구멍까지 노랑내 물이 올라옵니다. 육류(고기)를 조리할때는 기름기와 노랑내를 70~90%로 깨끗하게 빼내고 맛있게 요리하면 됩니다. 대한민국 사람들은 육류와 여러가지 채소, 야채, 양념소스(김치 포함)는 기본적으로 함께 먹습니다. 예전, 젊은시절에 선진국 국가에서 육류의 기름기와 노랑내 때문에 음식이 맞지않아 마음 고생한 기억이 나네요.

Oil stays on the bottom. Rice is cooked with the steam of water, that is why rice it's put last and on top.
