When you take a photos from the messages app and send it to someone, that photo saves to your camera roll. Is it possible to turn off this feature? Is so how?

You cannot invite others to your Photos gallery on iPhone or Android phone. However, you can invite others to a Google Photos or iCloud photos account. Let me know if this answered your question. If not, I'm happy to help more.
