Really good just made this today guestamated everything measurement wise and didn’t have the chili past so I substituted with hot sauce and a bit of tomato paste also substituted rice flour for all purpose and the rice vinniger with apple cider vinegar… worked great tho! Also first time frying

This is probably a really stupid question, but how do you double fry something? Do you just fry it, lift it out of the oil and then put it back down for the second fry? Or take it out for an amount of time and then re add for the second fry after waiting for a bit? Help a girl out 😫

Yeah. The 2nd one
u take it out and wait for the oil to get hotter and then fry it again
Fry it, take it out, set it aside for few minutes and flash-fry on slightly higher heat
You fry it one time and eat it and then poop it out and fry the poop again and that's your second fry...
Let the oil go from the first time that you fried and put the chicken again when the oil gets hot add one more time
