I like using a pressure cooker since I hate waiting. I stuff them with bread crumbs. I also bite way up the leaf to get much more artichoke in my mouth. Very nice thanks

Not only is enough for kids/small appetites, there's another warm one on the stove. After the edible leaves, flip over & use a spoon to scoop out the choke. Use that dab of mayo on your plate for the heart; I ate vegetables w/B.F. Mayonnaise on broccoli, asparagus and avocados.

We pick an artichoke and start it steaming right away. We don't do the preparation you show though. While it is steaming I mixed up a killer dip made from mayonaise and herbs. Something my mom did for mig when I was younger (and tat I still do) is to cook it well without cutting anything of, then make a "dip" with oliveoil, salt and lemonjuice. When it's done cooking you peel of a leaf and dip the soft part in de dip and eat it. You should try it! It is sooo good :)

Artichokes are the ultimate 70's California hippie veggie. I was born in 1970 and growing up artichoke was a favorite food of my mothers. Grown in central Cali along with brussel sprouts they are they quintessential California green.
I can't wait to try this method. I have spent alot of time (and mess) cleaning the choke out first! Now I think this would be so much easier. I will them try stuffing the 1/2 artichoke with the breadcrumb, garlic, mozarella and shredded parmasean stuffing. Maybe bake it for 15 minutes or whatever to melt. :)

I roast my artichokes and they are to die for. At 425 wrapped in yes...foil. for an hour to an hour and a half with a couple garlic cloves in between the leaves. Yum no oil either. I want some now lol. :)
I love roasted vegetables! Two of my favs are roasted beets: I cut the beet into wedges, dress with EVOO, balsamic, honey, S & P. 385 for 40 minutes: awesome! Excellent with goat cheese when warm, too. Makes it fancy for a side or salad. My second fav is roasted broccoli. I spritz with EVOO, S & P, and roast for 15 to 20 min @ 385. I have even roasted green beans recently (same as for broccoli).

How do you know when to pick the artichokes if you grow them? I have eaten them where the stems are not edible & I do not know why it was like eating rope, there was good stuff mixed in with tough fiber. I have had artichokes that where entirely edible including the whole choke. I never cut away any part before eating it. I cook it & peel each leaf & see how the center goes. Sometimes the choke leaves & the fuzzy stuff on top of the heart are edible & taste like just the heart.

I bought an artichoke for the first time and thanks to you :) I know how to handle it - however I missed a point - after one eats the base of the leaf does one throw the rest of the leaf away and attack the centre which is the heart?
The hearts (Jared from store) are also great on sandwiches. :) You mentioned a garlic aioli (com'on folks, mayo by another name... ;) ) but here, in the south, we like "Duke's" mayonnaise because of its slight zing and when you add in a little lemon its awesome for an artichoke dip. You can try mixing in things like some smoked paprika to give it another layer of flavor. My mom used to make artichokes when I was a kid and they are fun to eat... But they make a good appetizer and are great to serve to a date as you can sit and talk and stare at each other while trying to eat these crazy things. Nice ice breaker. :) Also as a lead-in to a fancy dinner party to whet the appetite. Thanjs!

There is no need to cut the top of the leaves you are not going to eat it anyway. Cook the entire thing, it's time saving!
