Strawberry Jam
-2.5 kg sweet and ripe strawberries
-850g sugar
-2 1/2 tbsp fresh lemon juice
Boil whilst stirring occasionally for 35-45 mins.

Recipe source for the doughnuts:
• Strawberry Jam Donuts
( I changed the recipe very slightly to my preference)
Dough recipe:
-560g plain / all purpose flour
-280ml lukewarm milk
-1 1/2 tsp yeast
-40g sugar
-pinch salt
-1 egg
Fry at oil temp 160C
