Think I'm going to add crumbled bacon...yum. 2 days later, bacon crumbles were a hit, but I misheard the oven temp & had to adjust. Yummy, yummy!

Perhaps some minced or diced artichoke heart added to the filling? It work very well with spinach and cheese.
