Homemade Backpacking Meal Taste Test - Unstuffed Peppers

  • Today I’m trying out a new homemade backpacking meal - Unstuffed Peppers by thruhikers (Renee and Tim). I’ve been trying out recipes for backpacking that are cheap, easy, and healthy. So far, most are more curry based; I love that flavor combination BUT I need more variety for long hikes. So I hope you enjoy the video and the slight variation. You could try this same recipe with any kind of carb and bean, but I find that rice and lentils are less of an issue for my digestion.

    Here is the recipe I will be using for this meal when I take it backpacking (for a large backpacking dinner for one person):
    2/3 cup instant white rice
    1/4 cup dried bell peppers
    1/3 cup dehydrated lentils
    2 Tbsp tomato powder
    1/2 Tbsp Italian seasoning
    1 tsp oregano
    1/2 tsp pepper
    1/8 tsp garlic powder
    1/4 tsp salt
    Boil 1.5 cups water. Add ingredients and let sit for about 10-15 minutes. (If using a Mylar bag or Ziplock freezer bag, just boil the water and add it to the bag with the ingredients.)
    When cooked, top with nutritional yeast. I will also be taking extra virgin olive oil in a small squeeze bottle for additional healthy fats in my dinners, so I will add a little of that and mix before topping with nutritional yeast.
