For me, life is too short to make 3 things myself; marshmallows, puff pastry, and creme caramel!!! Special thanks to factories that are providing us with such delicious, hard mode food stuff!!! I'm not trying to be rude to Lindsay, she is sooo cute and love what she's doing.... I'm just saying!!!!
I love making marshmallows, easy to make and you can make them any color/flavour to match what you need. Hardest part, the waiting 3 hrs to cut into them! lol

The whine is probably only audible in the video, not in real life. The magnetic field induces a voltage in the camera microphone, producing that awful noise.
No it is in real life. I have the exact induction hot plate as that. The noise is annoying. I also have a full induction range and it also makes noise. It's just how the induction ovens work right now.
Yeah. I've tried making other gelatin-based things with agar before and the results were ... not good. I'm not keen on how gelatin is made, but it'd be hypocritical of me to decry it, because I'm an omnivore. However, when I want to make something to serve to my vegetarian/vegan friends, it's probably best to move on to something else.
It's neither possible nor necessary to bloom agar. In order to activate agar you must boil it with sugar until it reaches goopy texture. I don't think that agar would work in this recipe but you could make 'zefir' which is Russian marshmallow. Most zefir recipes don't call for pectin though I've never succeeded making zefir with out one. If you can't find pectin, you can use jam or marmalade instead of fruit purée for zefir, it comes out just perfect.
