I'm surprised I got this on the first attempt. Gran Prix mode significantly increases the amount of laps on each course, and adds fuel and tire wear. The main concern is your tire wear, as the more worn out your tires are, you have to take corners at slower and slower speeds in order to not spin out.
If that wasn't bad enough, your top speed also decreases the more worn out your tires are, which on the beginner track, basically forces you to pit at least once in order to get 1st, and pitting takes a lot of time. Since tire wear slows you down so much, you want to also prolong the life of your tires by not drifting as much, which you'll wanna do on the final corner for the beginner track. Though that's slower, so a good rule of thumb is to stay at least within drafting range of 1st, be careful not to let them go too far ahead!
At the start of the race and after exiting the pit, you'll wanna go as fast as possible to catch up to first, prolonging the catch up just jeopardizes your chance of getting 1st, and delays when you can start prolonging your tires.

Not staying first even with 17,5 second laps, then not getting lapped taking a 44 sec pitstop lap. The rubberbanding in these old games was super strong. They must get like 25% faster when you're ahead

If you play on a linked cabinet with one of the other cabinets set to live relay mode, then you can observe the placings and current speed of the CPU cars as you play. When you're either in the lead or close to the lead, the CPU cars can achieve 200 MPH (320 k/h), but when you're half a checkpoint or so behind the leader, the CPU is capped at 155 MPH (250 k/h).
In normal play this is pretty reasonable, as no matter what the CPU isn't putting up impossible lap times, and you can always reliably extend your lead as long as you're playing well. But in Grandprix mode, where your car is subject to tire wear and pit stops while the CPU is not, it can get pretty rough. I'd argue that it's advisable to pit a little bit after the halfway point of the race instead of exactly at the halfway point, just so that your car is in better shape for the final laps, making it slightly easier to maintain your lead.

I like this video, if only because of how intense the battle for first to 5th place was throughout the entirety of it. Although, I will admit I miss the Caution laps.
