I believe in the saying 'Give credit where credit's due' so as Frugal Fit Mom's best known budget challenge video that has since got her over 2M views is where this recipe came from and coincidentally what made that video so well known I thought it was only fitting to mention it. :) If you haven't seen it you should check it out, I think you'd like it, it was titled something like '126 meals for $30, Extreme Grocery Budget Challenge'. I really enjoyed this as well, can't go wrong with some comforting banana muffins and spit pea soup, lovely!

Yes I'm definitely going to try this in a future video! It's definitely not easy to eat on an extremely low budget when you don't have the time to prepare anything from scratch.

I've seen some content creators using it now. It's not in my area yet. Enjoyed this video. Will be catching up on you vids :)
You really kept the stir fry in the fridge and it was still good after a week? Good enough to freeze for even longer? I normally try to get through things within 3 days so they don't go bad. I have tried freezing lentils after they were in the fridge for 3 days, and when I thought it already tasted like it had turned.
Great video but one thing i have to say is there is loads of budget challenges on UA-cam but I what I can't seem to find is recipes for time poor people; with work commitments I'm lucky if I have 1 hour day to myself and often struggle with with not knowing what to make .....some days I just don't even bother, skipping meals or just resorting to snack and instant foods. Do quick, healthy meals (as in 5-15 minute prep and cook time) that are budget friendly even exist? I'm starting to doubt it! I'm gonna finish my packet of potato chips and go to bed.......
I agree, it is really tough to eat on a very low budget when you also don’t have much time. I used to bring raw potatoes and a frozen bag of vegetables to microwave as my lunch when I worked 12-14 hour night shift. It definitely is a little more expensive to buy more healthy and convenience items, even canned beans, but I think it can still be done on a low budget.. maybe not $10, but more like $15-20, I’m happy to try it!
Maybe once you get into a habit of making the same things it will seem easier and faster? Overnight oats are easy. bagged salad kits? Frozen veggies and cous cous ir quinoa?

Yogurt works really well as a fat in banana bread as well. :) I've never tried vegan yogurt but I'm sure it would be fine.

Tortillas are easy to make. They are flour, salt, water and a fat. There are recipes with baking powder and recipes without it.
