I was talking to my wife about this earlier today. They feel more like a real family than any other TV comedy family I know, animated or not. They just interact with each other in a way that feels organic.
One of my favourite things about Bob's Burgers is that the dad is loving and supportive and the family members actually like each other. This definitely isn't the case with other animated shows.
Sure, I know Bob says that they’re all terrible at their jobs in the first episode, but at least he’s not strangling Gene and shouting “Why you little!”. To be fair, Homer doesn’t do much of that anymore.

Part of the reason Bob struggles to stay afloat (besides his poor money management skills and crazy family) is that even fully packed, his restaurant only seats about 25-30 people, whereas Jimmy Pesto's can probably seat more than twice that. Also he closes the restaurant at 7 PM. I had a few beers with some old restaurant buddies and we went over Bob's seating, pricing, food costs, hours, etc. I don't know how intentional it is, but the show creators have pretty perfectly laid out a small restaurant that would make just enough money to skirt by.
I love the "we're here, we're gruyere, get used to it burger" because Bob is canonically bisexual and it's just like a little bit of more evidence to throw at the audience.
