- Steven Rinella heads into the mountains of the Sonora Desert on a true, wild, free-ranging bison hunt. Steve knows Buffalo, but seeing and stalking these beasts in this dry, stark habitat is very different from anything he’s ever done. I love your last little bit--i always have a hard to time explaining to people that true hunters, have more respect for an animal, and a non hunter will ever have.
The bile thing is also part of my culture as well. Although we add herbs to the bile and meat before eating. It is respect to the animal, so we try to consume as much as we can, even keeping the bones to make soup broth. This goes for all big game that we harvest. For birds, we do not rip out only the breast. We pluck the bird completely, gut it, then cook the entire thing. I was born in the states and learned this from the elders that immigrated to this country. I still carry the tradition to the younger generations that I hunt with, even though our fore fathers are no longer with us.

The thing that I like the most other than he's a respectful hunter that treats it not as a sport but as a lifestyle is that he is actually a good shot. You watch all these other people go out and hunt and they can't down something with less than 5 rounds.

Steve should talk about his rifle and why he is using that caliber on these hunts :) I love these episodes!
He used 7mm Mag, and I believe it is because a) it is more than sufficient to take any North American Big game animal, and b) inside of about 400 yds, your range and wind estimation are much less critical.
He didnt say for this hunt, but in his book "American Buffalo" he mentioned using a .300 Win Mag for his 2005 Alaskan buffalo hunt. He also mentioned that caliber in his "A Guide to Hunting Bison" article on the MeatEater website.

It's amazing how ranchers handle game. I used to go deer hunting with my dad and his friends, and the ranchers would carry the dead dear on their shoulders, on steep land. We're from Nuevo Leon, MX, border state with Texas.
If I have to see another Ty Pennington commercial about mortgages, I'm going to let Steve blast me with that rifle...
as an archeologist, I've seen some records of indigenous people telling Europeans things that made no sense. sometimes it is pretty obvious it was to mess with them. the gall bladder thing is most likely one of those pranks.

having had bison meat, i can't imagine how great that lingua is vs traditional cattle.
I live in mexico and lengua Is a pretty common thing to eat, I'm curious how buffalo compares to it

Awe yea!!!! That is how we use to make our jerky when I was a kid. Those were some fun nights with pop's slicing up a deer or cow and stringing it all over the backyard. Hahahahahahaha my mom hated it!!!

it is a completely different thing to see hunters that respect and use the whole animal they hunted, and that also understand the cultural setting and the issues that need to be discussed! I am not a hunter and I think I could not kill animals like this one, but this series gives a totally fresh and different perspective about conservation, fairness, cultural values, and about the motivations and worries of the hunter. You need to try raw beef laab (tartar essentially) with some gall. Its one of the best asian game dishes you can honestly make! The same recipe can also be used for fish/chicken/venison and more!

I love how Steve is about to say something like ‘and now we have laws that’s prevent (annihilating) buffalo” to “…we use much more restraint.”
Not the first time Steve almost gave credit to laws protecting animals, but catching himself to attribute credit to hunters being the true wildlife managers 🙄 lol
You can dry meat in places like Alaska, depends heavily on the weather though. The 'Wegians even dry fish in the cold where it's dry enough. Granted it's generally better to smoke it instead if you're worried it's too moist out.
After this video I got out a package of Elk liver. Tomorrow, onion, home fried potatoes, and sizzled liver. Thx for reminding me.

This show is responsible for how I view what I consume now. I will never EVER be able to shop for meat at any big box store. How can one say that they care for animals, and for the planet if we don't treat what we eat with respect. I was so naive and ignorant of what hunters do, thinking that hunting was just a big game of killing. They are truly the ones who conserve and respect our planet and the animals that God put on earth. I am hoping to learn to hunt this year, but for now, I only shop directly from farmers where I know and see with my own two eyes how the animals live; just like God intended them to. Thank you, Steve, for this show I am sure has opened many people's eyes to what it truly means to eat ethically.
What I love about meateater is that he's not a trophy hunter, my family has always been meat hunters so we all love his show

Enjoyed watching this again...am surprised you didn't edit out the gall/liver tasting...the first time i almost gagged watching you try it. I think Kevin Costner's Indians seemed to rush and try the liver after the kill. Thanks for the video release 🙏
The Indian thing was factual. The liver is a large storage area for glucose. After strenuous hunting without much pre made food to eat, eating the liver was a good way to replace your own exhausted glucose stores. Also organ meat is the first thing to spoil on a carcass.

All locals wear these white cowboy straw hats, I wore a straw hat in northern Australia and they are the best in high heat and sun and very confortable
