    OIL-FREE TOFU JAJANGMYEON
    (serves 3-4)
    3-4 servings noodles
    1/4 cup Korean black bean paste chunjang (amzn.to/4655j6f)
    1 tablespoon tahini
    1 tablespoon miso, adjust to taste
    1 tablespoon of date sugar or sweetener of choice, adjust according to taste
    1 onion, cut into chunks
    4 garlic cloves, chopped
    1/2 block tofu (or protein of choice), cubed
    1 zucchini, cubed
    2 cups cabbage
    1/2 - 1 cup water
    1 small potato, mashed (or 1 tablespoon buckwheat flour), for thickening
    cucumber strips for topping

    Who has watched Doona?! It surprisingly contained more than I thought. And when I saw them eating the noodles I wanted to do a healthier versions instantly. (Side info - usually the meat and sauce in jajangmyeon is fried in quite a bit of oil before putting together the recipe. It's tricky because when the sauce is warm and thickened, it doesn't look oily, but it has a lot in it. And all that just goes into your gut and you say, good luck gut!). You never know how a recipe tastes until you take out a lot of the bad stuff, and this one tastes pretty goodddd....I included a link to a Korean black bean paste that doesn't contain too many additives and will continue looking for substitutes for our new ingredient Mondays!☺

    I liked your review of Doona. I watched it a couple weeks ago for the romance story and I hardly remember it now. Lol. It did open me up to feel sympathy towards celebrities though. Thanks for the jajang recipe! I am so lazy so I just buy the instant vegan jajang packs, then add soy milk to the sauce packet, and eat with store bought fermented noodles, fresh tofu and any veggies on hand. Diluting the sauce stretches out the 1 pack meal to 3 meals and it's a tad less unhealthy. 😅

      Oh that seems amazing!! I've never thought to mix it with soy milk? Is that a personal recipe or have you eaten it like that at a restaurant before??! -- Yah I'm catching a bit of Castaway Diva now and like that...well actually, I like the actress a lot. I want to see kdramas focus less on pretty...I kind of want a gritty, non-polished, shot with no filter type of drama 😂

      @@EastMeetsKitchen the Paldo jajang sauce packet is actually quite rich for me. I used to add more noodles and a bit of the boiled noodle water to thin it out. However, it was always too many noodles for me to finish. And it doesn't taste good the next day (it loses a lot of flavour). So I thought, why not just cook the portion of noodles I can finish, dilute the sauce, and then refrigerate the unused portion of the sauce for the next meal. I only buy soy milk for the protein content so that's why I use it to dilute the sauce! This way, at every meal, I get fresh noodles, the right flavour I want for the sauce, a little bit less unhealthy, and save on the cost of my meals.
      Totally agree with you on finding a more raw K-drama. I highly recommend Yumi's Cells!!! I watched it last year and haven't found one that comes close to it.

    I haven't gotten a chance to watch Doona but I like the vegan version you made of the recipe. I made a video with a vegan version as well except I skipped the protein all together and I did it over rice. I look forward to your ingredient monday as you look for alternatives!!

      @@EastMeetsKitchen - I don't know if it fits within your diet, but that's they way I like to eat it. It's more filling if you don't use tofu.

    It’s adults responsibility to protect children. We can teach them to stand up for themselves until the cows come home but juveniles are no match for an adult with authority that wants to abuse them. It’s our job to make sure they are safe and protected from abuse. It’s not their job.

      Definitely from both ends and adults monitoring adults would be great. Sorry - i wasn't putting all the responsibility on the kids, but like driving, I can only control things from my end. It would be great if everyone was instructed to drive better and I still would want people to be...but I'm going to make sure my kid is properly equipped.

      The most well "equipped" juvenile can still be abused by a predator if there isn't a parent protecting them adequately.@@EastMeetsKitchen
