    Used thighs, trimmed the skin, removed the excess fat, added whole black pepper corns, and reduced the sauce for a thick consistency. I served with brown rice. Everyone loved it. Thank you for another successful recipe.

    I am filipino and we do put bay leaves in adobo. that is where the majority of the flavor comes from. thank you ochikeron for the recipe!! and sharing this filipino dish : )!

    I tried this yesterday. I've never succeeded in making a Chicken Adobo that tasted anything like what it does when a Filipino cooks it, but this version (slightly modified) worked wonders!
    I had extra garlic, more bay leaves, and fried the chicken briefly before boiling just as my Filipino friends do too. I have finally mastered the Adobo! It was perfect, so thank you, salamat, and whatever thank you is in Japanese for this! :D

    I made a variation of this.. But didn't have bay leaves, but I added ginger and a splash of pomegranate juice, and baked it in the oven. Served with white rice and steamed broccoli and carrots.. 'twas delicious. :)

    In Japan they tend to have a lot of multipurpose cookware, so some of their cookware may look like things we can't traditionally use over head but are made to be used that way and are safe to heat in the oven or on a stove. For example, you can put a glass bowl with plastic wrap over it into a Japanese microwave and it will be completely safe! Some cookware overseas is just made with different materials then in places like the United States.

    The adobo marinade is pretty versatile... you can use it with pompano fish, pork spareribs, rabbit, beef brisket (some like to add beer to make it extra tender), eggplant, okra, and banana blossoms.

    We usually use pork and chicken in making adobo. It is cooked in many different ways. It taste more delicious when it is kept longer.

    My family make it another way.with one small bay leave,a few whole black pepper, one tablespoon of light and dark soy sause each, salt, three to two garlic cloves, MSG, olive oil, with chicken feet or pork

    This is a very interesting way of cooking adobo. I don't add onions in mine. I also saute the chicken in cooking oil and garlic and then i put in the soy sauce and the vinegar. My elders also said not to stir it until the vinegar is boiling for about 10 minutes or so, otherwise you would get an annoying meat smell. Also, you can use pepper corns instead of crushed pepper. :3
