The Ultimate Boiled Corn (Corn On The Cob) Recipe.

  • Perfectly seasoned boiled corn unlike any you've ever had before. Caribbean cookbook author Chris De La Rosa shares his recipe for corn on the cob done as it's traditionally done in his native Trinidad and Tobago. Sweet corn is boiled with perfectly seasoned coconut milk and herbs to enhance the flavors of the corn.
    This way of making corn on the cob is traditional to rural parts of the Caribbean and typically freshly grated coconut is used instead of the canned coconut milk I opted for. Some people know it as Tobago corn.
    You'll Need...
    5-8 large corns
    2 scallions
    3 sprigs thyme
    1/4 teaspoon black pepper
    2 cups coconut milk
    1 tablespoon chopped parsley
    1 large clove garlic
    1 tablespoon chopped shado beni (optional)
    1 scotch bonnet or habanero pepper (whole)
    * salt if you so desire
    * water

    That own looks really good,not sure about coconut milk.I will try it though! Wish I'd seen this recipe months ago when the corn was really sweet,last corn I bought was dry and not sweet,last of the season.

    Sorry, Chris, did mine (corn) just boiled, forgot the salt and that was good as I salted my breaded zucchinis a bit too much and blood pressure is high, but your recipe sounds delicious and I try it when I'll have all the ingredients.
    Exquisite post with all the details, wanted to recommend you to write a cook book, but you did, and you located somewhere I cannot get, but I have been there twice.I 'll have to here otherwise I'll write you a novel.
    Your just great, for cooking, three girls, wanting to climb the mountain that looses it's snow slowly, but surely...and helping all those needy kids with AIDS. I can only wish. I wish you and all the climbers all the good luck in everything and come back spiritually enhanced. Can not wait to listen to the other recipes on the side, Macaroni Pie and spicy fried chicken...

      Emilia Nyerghes give himalayan salt a try, it has many many health benefits and it lowers blood pressure and it prevents muscle cramping,
      balances your electrolytes,helps your body absorb nutritients,balances PH levels

      Frozen corn will get mushy. You will want to use fresh corn.

    Is there any Jamaican "ready mixed" powder or liquid sauces you recommend?

      That question is not a sin lol...It's called Scotch bonnets and most Asian food markets have a Caribbean section, but that would be a good video idea for him to do because I'm sure other people don't know where and what brands to buy.

    season and lot of hot pepper, got to be real hot and spicy and well
